THAI PORK LARB (LAAB) - 2 SERVINGS

1 Pound Ground Pork
1 TBSP Oil
1 Heaping TBSP Toasted Rice Powder
1/2 - 1 TBSP Chili Powder (or more depending on your spice tolerance)
1 TBSP Fish Sauce
1 - 1.5 limes (I used the juice from 1 lime)
Pinch of Sugar
3 - 4 Small Shallots (about the size of a grape but use however many you like)
1 Green Onion
~20 Fresh Mint Leaves
*Optional - a few leaves of Culantro - tastes like cilantro and is also known as long coriander.
TOASTED RICE POWDER

Heat a frying pan on low heat and add roughly 3 TBSP uncooked Thai sticky rice.
Stir continuously and toast until the rice becomes golden yellow and smells like nutty popcorn.
It takes roughly 10-15 minutes.
Let the toasted rice cool a bit and then pound using a mortar & pestle until it turns into a coarse powder.
*You can also buy packaged rice powder at your local Asian supermarket or from the link below!

Heat a small saucepan (one that has a handle) on medium-high heat.
Add in 1 TBSP oil and the ground pork.
Break the pork apart and saute until fully cooked (roughly 2-3 minutes).
Take the saucepan off the heat.
Add in the toasted rice powder, chili powder, fish sauce, lime juice, and sugar.
Mix together and taste to adjust seasoning to your liking.
It should be tangy, spicy, a little salty and sweet. I like mine a little more on the tangy side!
Thinly slice the shallots and green onion. Add them to the pot.
Rip in a few culantro leaves if using and ~20 fresh mint leaves.
Mix it all together and garnish with more culantro and mint.
Serve with a side of sticky rice or enjoy by itself!

I’m in Texas but t lived in Fresno cali the best laab ever I’m gonna try to cook it wit sticky rice.
as a college student, 5 minutes to cook a meal is already record breaking TT

Laab is NOT cooked in oil!. Just add some water to a dry pan, and cook until done. Then add aromatics, rice powder and ground chili. NO OIL!!
Dull knife is no go for cooking show let alone for cooking period😞
