I am a teacher and commend you on your clear explanations. I have tried several of your recipes and have really liked them. They are accurate and best of all it seems your cooking style is parallel to my own! I grew up in Mexico and Texas, have traveled over 30 countries and you are my #1 Chef! Greetings from San Antonio, Tx,

Married a San Antonio native, living in Vegas...he decided we needed some ‘real’ tamales. Took 3 days to clean up, and the first tamale I made was the diameter of a baseball bat! He laughed at me til he cried and stored my first tamale in the freezer for over a year to show his friends when they visited!😁😯 I learned...and thanks to you and moving to SA, my Tex/mex skills have greatly improved!!♥️♥️

I used to buy mine at costco because I didn't really know better lol but then my friend made some and it was just so much better (and cheaper) so we used to do tamale parties before covid happened where we will make like a few hundred pieces (400-500 pieces between 4 people xD) with pork, chicken or cheese/jalapeno (or combination xD) and divide it up to take home and freeze (vacuum sealing before freezing is the best, and when I say "vacuum sealing", I meant we put it in ziplock bags and suck out the air through a straw before sealing it lol). Being broke College students (still are xD), having frozen tamales to thaw out for meals help stretch out our money xD Watching your video gave me sweet nostalgia

I am so truly excited about trying out ALL OF YOUR RECIPES!!! You have come into my life when some medical issues have prevented me from really getting into my kitchen and go back to enjoying cooking like I did before my Dear Mother, which by the way became such a Wonderful “Chef!” Later in life but did Always invite me either come into “here Personal Space!!” For REAL!!! to come and Learn as she went cooking and boy was I TRULY BELIEVE WAS A BLESSING AND A Rare invite, to learn what ever new “Authentic recipes!” And if I was living out of town which I did, in Atlanta for about 13-14 years. When I wasn’t in Kentucky, my Mother and I would spend HOURS ON THE PHONE learning what ever recipes she had learned either from someone or a new recipe from someone who was originally from another Country or a new Recipe Book!! Her favs where, Italian, Chinese but the things that she was a True classic and I’m Serious when I say “good ole-down home country food?” NO ONE ELSE OTHER THAN HER SISTERS COULD BEAT THEM at their recipes, some with instructions and some from memory...She was Absolutely and I do mean ABSOLUTELY NOTHING BUT A GREAT COOK! God Rest Mama! But Thank you so much for getting me back into my kitchen and now enjoying cooking again!

Tamales are one of my favorite foods ever, and yours look amazing! I think they're a bit too labor-intensive for me to prepare and there's a sweet lady near me that sells delicious homemade tamales (chicken, cheese w/jalapenos, and pork) for $1 each. We order 40-50 every week. They freeze very well and reheat very well in the microwave. 😋 I love your channel so much and congrats on your new cookbook! 👏😊

Kathie says: I made these tamales yesterday. I followed your recipe exactly except instead of using 2 dried Pasilla Chili peppers, I used 4 dried Ancho Chili peppers (plus the 8 guajillio chili peppers). This is the first time that I have ever made tamales...they were on my “Food Bucket List”. I want you to know that they were the BEST tamales that I have ever tasted! Yes, they are time consuming, but are SO WORTH THE TIME!!! Thank you for sharing your recipe! Also, today I received your cookbook! I definitely will be making quite a few of your recipes in the future! Your cookbook is wonderful!! Thank you!

My mom and grandma usually go to the Mexican bakery to buy “masa para tamales” and then add all the goodies to it. I have always wanted to make masa from scratch. Now I can! FYI, if you’re willing to work all day (starting at like dawn) you can make a lot of dozens of tamales then separate them into dozens wrapped in aluminum foil, label them with paper and tape (homemade label) and freeze them! You don’t have to cook them either, they last all year in the freezer “raw” (since the meat is cooked). Just open your freezer, pull out the amount of dozens and *POOF* tamales all year around! 😊

Watching you make helps put me at ease to try this recipe. Definitely easier than trying to read it from a website or cookbook. Except, your cookbook. So excited you added this recipe. Can't wait for your cookbook 💕 Can't wait to surprise my family with homemade tamales 👍🤗

Oh my gosh, these look delicious. I'm 72 years old, and have never made tamales. When I was young, I would help my mom with coating the masa on the corn husk. She would always ask me if I wanted to learn, I would always say "NOOOO"!!!. She would then say, "I'M NOT ALWAYS GOING TO BE HERE". How I wish I would have learned from her. Moral of the story, LISTEN TO YOUR MOM AND LEARN. SHE'S NOT ALWAYS GOING TO BE HERE. You have given such EXCELLENT INSTRUCTIONS. Going to make these for Christmas. Thank you so so much. And I say THANK YOU SO SO MUCH from my heart. Merry Christmas to all. Stay safe and healthy. God Bless You and Yours.

Yes! Finally someone that uses the spoon method. Yeah there are other easier ways but I think everyone should do it 'by hand' at least once in their lives. My momma taught me to wet the spoon first then smooth out the masa onto the husk. Dipping the spoon in water repeatedly throughout the process.

Also my sister and I never liked the ' hot ' tamales so my mom would combine a lil batch of mass and meat with chillies and make big tamales for her and my dad. She called those Borrachos. So growing up we knew the jumbo ones were the hot ones. 😢 I miss my momma.

Wow, this is so helpful, I really enjoy how you speak at a really understandable pace and articulate the steps so clearly. All the tips are wonderful. Makes me motivated to go ahead and try making the tamales from "scratch"....no luck buying any kind elsewhere so far. Great, Thanks.

I love you, I have never made tamales but listening to you and watching make them made me think back to when my grandmother would make them, it was an all day ordeal but the rewards afterwords was awesome, love ya again.
