Traditional candy (白糖蔥 / Pulled Candy) handmade by a Taiwanese candy master
Every morning from 6am to 11am, he will pull 25kg of sugar in candy in his home. He is in his 70s and been making candy for 20 over years.

    what the old man is doing is called candy pulling, i used to work at a restaurant wich made its own candy, its really REALLY heavy to pull the candy, major respect to this man!

    Farhan/ Power I’m not saying it’s a problem, some new candies made in factories are quite good, but as moon jar said , this is starting to die off, so the fact that this man is still making candy for other people to experience is quite amazing.

    I’ve tried stretching those candies, and even though they look silky and stretchy, it’s ROCK SOLID, feels like a really strong rubber band.

    Either the handmade candy makers have superhuman strength or they have some kind of technique for it because the pulling part is HARD

    @@cylnder I mean we all saw how hard he had to pull for that. A lot of candy makers that I have seen it used heat insulating gloves and don't cool the candy down nearly as much as he did just because it's so hard. I think part of what helps the people who make a bigger batches though is that the candy is heavy enough that it stretches itself for a little bit. That's why a lot of the candy hooks are hung on a wall at about head height.

    My dad is 93 years old. He started working as farmer when he was 13. He is still working on the farm every day. It's impossible to stop him from growing plants.

    I was super anxious throughout the whole video looking at him dealing with literally boiling sugar with BARE HANDS and with minimal protection, that anxiety turned to massive respect later as he pulled and stretched that candy by hand. He must have so much strength and skill, plus experience and scars to be able to do that. Mad props.

    Yeah could be but he didnt touched the candy until it gets slowly hardened, and I assume that the the water he used was ice cold, but I agree that takes skill and calluses to make!

    @@Andre-vt4np I'm pretty sure the water barrel under the pan in the first part was very hot. It looked like it was steaming, and if it was that cold, the sugar wouldn't be able to spread out like that.

    You always hear about the color change after pulling, but this is by far the most significant and satisfying video to watch candy being pulled. Each pull adds a little extra air and really does make that color brighter and lighter. Crazy.

    I live in Taiwan. I used to eat it when I was a kid. It’s sweet. Sadly, there are fewer than ten masters of making 白糖蔥 left in Taiwan. The skill is gradually lost. Ohhh I miss the taste of it a lot. (´・_・`)

    This is quite different from the other pulled candies I've seen. Those are solid hard candies while this is hollow with a meringue-like texture. This looks so much better! 🤤

    I hope you guys realize how impressive it is that he isn’t wearing gloves while stretching the candy. That stuff is HOT especially the part where it was still in the pan and he was trying to get it unstuck that candy is as hot as if it were boiling and thats why you usually see candy makers nowadays wearing gloves while stretching candy like this.     Most of the street food chefs, do not uses any fancy-samancy tools to cook simple dishes like the big restaurants usually do. This man is the living example that experience and training is all it takes to cook great food. But in this pandemic ppl should use gloves in the kitchen.

    Apparently the sugar ‘slab’ can be pretty heavy sometimes so you need to use quite a bit of force. Arms of steel too.

    “白糖蔥“ means "white suger scallion" in Taiwanese. Master of this skill is less than 10 people now, even in Taiwan, the handmade version of this candy is really rare, so when you come to Taiwan someday, you definitely need to try some, it's really good.

    It’s called “scallion candy” in Mandarin cuz it looks much like the white part of scallions. Crunchy and not so sweet as normal candy, love it with peanut powder on it
