    I'm from Lebanon and Tabouleh was always one of my favorite things to eat... When I started trying Keto, I made a variation on the same theme using cauliflower... I beat the cauliflower in the blender until it became very fine - like bulgar wheat - then put it in the microwave with a couple of spoons full of water for about 7 minutes - kinda like they make the cauliflower rice - then when it cools down, just make regular Tabouleh with the cauliflower in the place of the cracked wheat... it tastes just as good.

    The only authentic ingredients used are parsley, lemon and olive oil. Real tabbouleh also needs mint, green onions, tomatoes, cucumbers, and bulgar. I use cauliflower as a bulgar substitute. Tastes like the real thing.

    Yes, Mint is also key to a good recipe, also adding allspice as in many traditional Lebanese recipes is a good touch. I have also added olives too.

    I love tabbouleh. I used to make it with quinoa; then I got away from grains and tried making it with other vegetables, but nothing seemed to make up for that grain-like softness. Pecans sounds like such a good idea! I look forward to trying it.

    Oh yeah! That sounds like a great idea. I always have hemp hearts around. Maybe a mix of that and cauliflower or pecans.

    Giving up tomatoes in tabouleh? I'd honestly rather be overweight for the rest of my life. Tomatoes are the bomb and I'll never, ever give them up no matter what. I like you Dr. Ekberg, but I prefer the vegan, high calorie density, low fat approach to health and wellness. Eating lambs is heartbreaking. Eating cows and pigs is heinous. Veal? Forget it. Straight up unethical. But, Dr. Ekberg, I like the way that you present things. I'll simply make this without the oil and add alllllllll the tomatoes.
