This was awesome. The wife really loved it and kept going back for more. The only change I made was cashews instead of pistachios (couldn't find deshelled pistachios and didn't want to make an extra trip to get them). Even with the change it came out great.
This has become a huge hit during the holidays with my family! I started making it a few years ago and everyone just fell in love with it!
Made this for Thanksgiving, with a couple of variations: Cultured coconut milk (yogurt) and plain coconut milk instead of buttermilk and milk, and pumpkin pie spice instead of allspice. Got loads of compliments like, "The best sweet potato casserole I've ever had." Thanks Chef John. I told everyone where to find you and all your great recipes.
I made this a few years ago for Thanksgiving and now it's demanded. I happily oblige. :)

Hiya Chef :) This casserole looks amazing. I do have a suggestion that might up the flavor a bit... Bake the sweet potatoes in their skin and when they're tender, scoop them out and mash. There's something about the baking that adds a caramel like richness that makes it even better. I make a similar casserole with pecans on top but I will definitely try the pistachios. They are my favorite. :) I love your voice, your skill, your sense of humor and I've yet to see you cook anything that didn't pique my interest and make me hungry. Hehe Your one pot rice pudding is my new favorite. Oh and the bacon jam. And yes - those slow cooked southern green beans are to die for. Chef John, Thank you for this recipe. I LOVE it. We just had it with a baked ham and I can't wait to make it for company. My son is allergic to nuts so I looked in the pantry for seeds which I use to replace the crunch of nuts when needed. I didn;t have any however, so searched for something crunchy and found ginger snaps. Really hard ginger snaps with some heat. I crushed them a bit and used them in the topping but cut back on the brown sugar. Awesome. I would prefer pecans or nuts but this was a good answer and it was yummy. Thanks again. Denise T.

Chef I've made this recipe every Thanksgiving since you released this video 12 years ago! It is my 'signature side dish' and my family and friends rave about it!
I wanted to add, this can be made ahead. I mixed it all up the day before, then set it out on the counter to come up in temperature for about an hour before baking it.

Did you make the entire potato part the day before and put it in the fridge? And then assembled the topping the day of and put it in the oven?

This recipe trips all my triggers. Sweet and savory.
My grandma makes hers with sugar free marshmallows and syrup and, no joke, it's the best thing on earth.
Chef John, I made this for a friend's Thanksgiving dinner. It was truly magnificent and everyone loved it. Awkward moment was when the Jewish household found out I put milk and butter in it. Good lesson for me!

Chef John, I am abolutely amazed at boiling the sweet potatoes instead of roasting them in the oven. Rubbing the sweet potatoes with olive oil and cooking them in the oven brings out their natural sweetness, are very easy to peel and are fork mash tender when done. All together much less work and a tastier result. Cheers! I'm going to try the pistachio topping though. Looks yummy!

Just made this and my god is it good. This is an after w/o favorite of mine. What is interesting is how amazing the sweet potatoes smell right before you put them back into the casserole dish. Hats off to you for the recipe sir.

I don't know how many years I've been using this recipe, but I come from a family of fancypants WASPs. Using marshmallows for any dish is totally passe. This dish, however, has become a staple. Every year they request I bring this. In fact, both sides of our family request it. Everyone eats every bite and every year they all say, "We hated sweet potatoes at Thanksgiving, until this dish appeared." It really is a success. It's probably the $20 worth of pistachios, but who cares? I'm watching this recipe again this year like every year to get myself in the shopping mood. If you've never made it, do so. There's no one with any class who doesn't die for it. Everyone always wants the recipe. I lie and say it's my secret... I'm awful.
@cartouchator Buttermilk is actually considered healthier than real milk; usually it has very little fat (because it was removed to make butter) and it's high in lactic acid, making it much easier on the digestive system than milk. It's also high in nutrients like Vitamin B12 and calcium. As for butter well...I use a lot of olive oil as a butter-alternative personally. But it's true that in moderate amounts, butter has health benefits too.

I love the addition of the pistachios and the fact that this isn't too sweet. Last Thanksgiving I didn't make sweet potatoes and my son almost disowned me. I'm going to try your recipe this year - love the maple syrup, cayenne, and buttermilk,

Made it for Thanksgiving, loved it. Btw, makes for great leftover pancakes the next day. Just add eggs, milk and a little flour, bake it, eat it with cranberry sauce or gravy... awesome.
I made this last year and it was a hit, this year I'm going a little cheaper and using walnuts and regular syrup but I think it will still come out well.

my mother decided to make a sweet potato casserole once, and neither of us could eat it. I dont understand adding sooo much sugar/syrup to them. Maybe I'll try this one. We generally cook slices of the sweet potato in a mixture of OJ and a tiny bit of brown sugar and starch to thicken.. oh and of course butter. It's really good :)

@ubermystic sadly, yes. Growing up my school cafeteria always added TONS of brown sugar and marshmallows to it. I actually thought I hated sweet potatoes because of it. It wasn't until I tried plain mashed sweet potatoes at a fancy restaurant as an adult that I realized it was the way they were prepared that had me thinking they were sickly sweet.
