If you're following Chef's thoughts, use the leanest part you can get. If beef, use rump or filet. If mutton, use whatever serves as a loin cut. But I'm guessing whatever you use, if you follow Chef's directions, it will be amazing

"Keep at room temperature. NO, refrigerated, what am I saying". That's just so early Pepin it's adorable.
He is SO QUICK and EFFICIENT and makes it look SO EASY! G.O.A.T.!
It makes my day to see and hear this man.
This menu is rustic, as a lot of things Pépin are. Jack has an extremely nimble mind. He's so experienced, that he can make up delicious recipes on the fly. I am sure at home, he just looked in the refrigerator, and invented a meal.
So gracious, I’m learning more than cooking.
