I've been running Korean cooking class and food tour company in Seoul, Korea for the last 10 years.
I wanted to share my secret recipes which are both easy to make and delicious.

Beef and radish soup / Muguk
Ingredients
White radish----------------------------------------------------------------------------------- 350g
Beef brisket------------------------------------------------------------------------------------ 200g
Shiitake mushroom------------------------------------------------------------------------ 100g
Minced garlic--------------------------------------------------------------------------------- 1/2 tbsp
Spring onion----------------------------------------------------------------------------------- 2 stalks
Sesame oil------------------------------------------------------------------------------------- 1/2 tbsp
Vegetable oil---------------------------------------------------------------------------------- 1 tbsp
Light soy sauce------------------------------------------------------------------------------ 2 tbsp
Salt------------------------------------------------------------------------------------------------- 1 tsp
Black pepper---------------------------------------------------------------------------------- 1/2 tsp
Instructions
1. Cut the vegetables. Cut the radish into bite size pieces. Slice the spring onion. Mince the garlic and cut shiitake mushrooms into bite sizes
2. Cut the beef into small bite size pieces
3. Heat thick bottom pot in medium high heat and stir fry the beef until almost brown. Add radish to the pot and keep stir frying for about 5 minutes. Pour in 8 cups of water and bring it to a boil. Skim off the foam. Add shiitake mushroom, minced garlic and spring onion. Reduce the heat to medium low and continue to simmer with the lid on until radish turns translucent and is fully cooked
4. Season the soup with dark soy sauce and salt and simmer in a low heat for an additional 5 minutes. Taste for salt and pepper

Is there any other reason for removing the foam from the broth besides the soup turning cloudy/dirty?

Actually no. There will be lots of foam when the soup starts boiling but it will subside a little when continue to simmer.

Can I use fish sauce instead of soup soy sauce?

I haven't tried it with a soup soy sauce. I would add just a little adjust the taste with some salt : )
Can I use pork or chicken

Don't you peel the radish?

Radish skin contains much more vitamin C than inside. Sometimes I peel it, but the one I used, was organic. So I washed it well and used the whole radish.
