You honestly don’t need to add the olive oil. Chorizo starts to release its own oil and fat very quickly while cooking.
I'm pretty sure the olive oil industry is run solely because of Ramsey.

I think you are referring to Mexican style chorizo which is very high in fat content...cured spanish (from Spain) chorizo is not like that. Neither are many variations of chorizo in Central America.
I just made this at home. Well.. it’s in the oven now. Gordon, if you’re out there, just want to say how much you’ve inspired me. I’m not a cook or anything, but the love you show for your craft has inspired me in so many other areas of my life. Thank you!

I made this dish for a friendsgiving over the weekend and everyone absolutely loved it. It's super easy to make and Mr. Ramsay's instructions are spot on! Novice cookers definitely give this a shot.
This is so good. Definitely worth straying away from your normal fool-proof roast chicken recipe for. I used Cajun sausage instead of chorizo and 2 carrots cut into very small cubes. Make plenty of stuffing for this one. The leftovers are so delicious I could just eat them alone or with some rice.

I make the stuffing recipe all the time (just the stuffing) - it's one of my favourite dishes! It's so addictive. But I use dried thyme (rarely fresh), 2 cans of the beans (I like the texture) and 2-3 tablespoons of tomato paste instead of the sundried tomatoes. Broke uni student and all that. One day I'll make it properly though. I bet it tastes great with the chicken. I also use a garlic-crusher instead of slicing and 2-3 fat cloves of garlic - great for warding off vampires and colds.

This is very satisfying to watch Gordon cook food with other ingredients he use to create these great looking food for customers. And they always looks sooooo delicious. I really want a chef like that like Gordon but I guess Gordon is the only chef I know is extremely great at cooking.
Thanks Gordon! I made this at home for the family...absolutely amazing! Everyone loved it! I rather enjoy the fact that he doesn't give all the recipe which forces experimentation bringing out the inner chefs passion.

It's to get the oils out of the sausage. To do that you have to fry off the sausage. If you don't add oil, the sausage will stick to the pan unless you want to slow cook the oils out

I set out to compare Gordon ramsay's recipe to Heston Blumenthal's roast chicken recipe. After 9 years I've finished cooking Heston's style of cooking chicken and am just now watching this. Looks good, can't wait to try it

He did that to help kick start the rendering of the fat and oils from the Chorizo. Olive oil in and of itself is a healthy oil and used as a condiment, for a lack of better words itself on a variety of breads/salads specifically Italian and French styles.

3:45 awesome tip cook it juicy with the foil on then remove it to give the skin the crispness ive seen people recommend no foil at all but the poultry tends to dry out no matter if you brined it well

lol i spent part of my childhood in france and go there every year, I can tell you nobody eats fucking turkey on christmas. Maybe other places but the turkey is native to the north american continent, i doubt that it's tradition.

SporeSpam Funnily enough I find it hard to believe you've tried the millions of different recipe's and different vegan foods the word has to offer. Today I ate vegan pizza, ice-cream made with coconut milk, and falafel, hummus and red pepper sandwich, it was delicious. Animal products are horrific for the animals, catastrophic for the environment and they're correlated to serious health issues in people like heart disease, osteoporosis, heart attacks and cancer. I am not making anyone feel guilt, if people feel guilt then that's because they know there's something wrong with breeding mass amounts of animals onto the planet to harm and murder them. People should stop being ignorant and take responsibility. No-one would feel guilty if I pointed out they're eating an apple and told them about the process that apple went through, so if I tell people about animals that they pay people to kill, and they feel guilt I'm not making them feel anything, I'm just telling them what happens and they know it's wrong so that's why they feel guilt.

I normally go on science channels and their are tons of religious/scientific arguments. I go on a cooking channel expecting no arguments. But then I remember.... this is the internet.

Maybe you should clean your ears out then, cuz it’s definitely not. There’s like 6 seconds at that end that is close, but still wrong.

That stuffing was a dish on its own. I'd do it just to take a bite of it
Made this. It's incredible.
I tried this at home, and it was easily the best chicken I have ever had! I could not et enough of the stuffing. I did take a while to cook, but still worth it;)
