Ricotta Stuffed Shells Filling Recipe
Ingredients:
15 oz (425g) ricotta cheese
1 cup (100g) mozzarella cheese, shredded
1/2 cup (50g) Parmesan cheese, grated
1/2 cup (50g) Pecorino cheese, grated
1 lemon zest
2 cups (60g) frozen spinach, chopped (and defrosted)
1/4 cup fresh basil, chopped - picked fresh from your garden in your office next to your bookshelf (or 1 tbsp dried)
2 tsp salt
1 tsp black pepper
Make sure to squeeze out your spinach 💪 so it doesn't add too much moisture.
Now some people like adding a whole egg or an egg yolk to this. My Mom always did, but I don't like the cheese "set" once it bakes and prefer it to be more oozy and gooey.
But remember their are no rules, you do you.
