Stuffed Bell Peppers. The secret is all in the stuffing!

Stuffed Bell Peppers...we all tried it at least once. Some recipes are more successful than the others, some passed on by our parents, grandparents, some served in a restaurant... Today I am sharing my favorite recipe. And this one is my son's favorite. I hope you will give it a try.
STUFFED BELL PEPPERS
For the stuffing:
3 pounds lean ground beef
1 large onion
4-5 cloves garlic
toppers from bell peppers
2 Roma tomatoes
3 teaspoons salt
2 teaspoons ground black pepper
3 teaspoon dry herb mix ( I used Sabzi Ghormeh)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon Aleppo pepper
1 teaspoon Urfa Pepper
1 cup #1 bulgur
All veggies run through food processor to get mash.
Then add it to ground beef.
Add spices. Soak bulgur in water for 30-40 minutes.
then drain and add to the stuffing.
Mix and stuff your peppers.
This recipe is for 12 large bell peppers, 3 pounds of ground beef, 2 cups(soaked) bulgur and 3 cups of vegetable mash.
Feel free to divide recipe.
For the sauce:
2x 2lb cans of crushed tomatoes
salt, pepper, dry or fresh herbs of your choice, cumin, coriander.
Add teaspoon of each and mix.
On the bottom of large baking dish add 1/3 of sauce. add stuffed bell peppers and cover with remaining sauce.
Bake at 350°F (180°C) for 45-60 minutes for very large peppers.
30-40 minutes for medium size peppers.

    I would cover with parchment paper first, then foil. Just make it more safe

    I can't find bulgur where I live. Can I still use rice, and if so, how much rice should I use for this recipe?

    Hello 👋 You will use the same amount: 1 cup of uncooked rice. I would wash it very well and soak it in water for 30 minutes before adding to your stuffing. Thank you for your comment 🙏 🌹
