    Cowboy Kent I grew up on stuffed peppers. Mom made them about once a week. Hearing your description in the first 15 seconds made me change my whole way of thinking about them. I'm still giving a shout to my mom Nancy, 89 and holding.

    It makes me feel great the way kent rolllin honors mexican cuisine 🇲🇽🇲🇽. U see, us mexicans really get offended when other ethnicity try to cook our way but fail, but gentleman kent rollins treats us with such respect and even though a couple of his recipes are quite different than the ones our moms cook, they are close enough if not as authentic as they come. I love this channel thank you for showing my culture the respect it deserves. You deserve our 🇲🇽 respect you have earned it you deserve it.     I’m making these for the NFC championship tomorrow as I am a diehard Eagles fan for my whole like. I’m having a party tomorrow and I bought enough to make 2 Dozen of these in my smoker. And I’ve got 12 nice 16oz ribeye steaks that are already marinating for 24 hours. And I have a large barrel smoker, which I will be cooking them on for my guests. They are supplying the beer and the snacks lol. It’s gonna be fun trying your recipe as I’ve never been disappointed with any thing you’ve ever created! Thankyou

    ken and Shan, Anyone who has not tried poblano peppers you really should. If you take the seeds and the veins out( use a little knife) they will not be spicy at all. So good like Ken dancing! Ken, if I pulled the torch out my husband would haul ass to his truck and leave! Thank you both! Shan no shame in slippers!

    As a Hispanic, we stuff poblano peppers a bit differently. Kent’s recipe is fabulous. I can get poblanos quite easily. The rest is no problem. Now I have something to concentrate on instead of watching KZread most of the time. Hey, but how else would I have gotten this great way to stuff peppers. Maybe you could do the Mexican version in the future. I think they are very simple. Thank you Mr. Kent. God bless & Stay safe!

    @@IWantToSmashLiberalsWithHammer The version I remember wasn’t so fancy, just the pepper roasted in a cast iron skillet to “cook off” the skin. Then stuffed with cheese and lots of bacon. I don’t remember the type of cheese, but I don’t think it really matters. Anything else is the cook’s desired ingredients for his or someone else’s taste. We didn’t have a lot to work with growing up. It had to be simple, but the poblanos grew locally. Lots of red chilies 🌶️ too, but that’s a different story!

    I grew up eating stuffed green bell peppers, and my first wife was from England and she got me hooked on cottage pie. So one day I decided to combine the two together, so I came up with a casserole dish. I chopped up the bell peppers and added them to the hamburger stuffed bell pepper mix. Next I put the mix into a baking dish and then layered mashed potatoes on top and baked it to yummy perfection. But I'm going to try making yours because they look flippin delicious!!!

    I love the stuffed pepper recipe. When you got the bacon down from the highest cabinet to give to the dogs, it reminds me of when I would make bacon for the family.     The KR original seasoning also goes really well with steamed vegetables. The stuffed peppers look amazing. They would be great with pork chops and I think that's what is happening here soon. Thanks for the great video.

    Normally in mexico we stuff poblano peppers with a soft cheese or with condimented grinded meat and we bath them with a tomato sauce, it is common as well to cover the pepper with some kind of egg "tempura". Your recipe looks delicious as well! Thanks for sharing

    Yummy. A good alternative for us that are doing low carb, instead of potatoes, use cauliflower mash and add the bacon and chilies, and cream cheese.

    Stuffed peppers (with a seasoned ground meat filling) were a mainstay on our table as a kid. I make them sometimes to be "closer" to mom and the nostalgia of it, as well as the way she made them was really good. She just finally passed at the age of 94, a farm girl and 40+ years as a dedicated cardiqc and intensive care nurse, her whole life was about caring for others. I've told you about her several times in the stories I shared with you... Her father was the town butcher, one of nine kids, she (when not working in the slaughterhouse) and her mother cooked for 13 people, 3x a day, 6 days a week (only their 11 on Sunday) and basically ran a restaurant out of their house making everything you could imagine from all kinds of meats/roasts to bread and baked goods galore and a frequent star was my grandma's stuffed peppers. An easy way to serve so many people and deal with the process and aftermath. They didn't smoke them but, they were baked in a wood-fired oven. 😉

    I've never seen stuffed peppers made like this. Mom used to make them regularly when I was growing up but hers were a little different. These look incredible so I'm up for trying them your way. Everything you make is outstanding so I know I can't lose with these.

    I have made similar. I have added half a tube of Jimmy Dean HOT pork sausage cooked and drained of grease added to the taters, bacon, cheese mix. Mmmmm good.

    Kent and Shannon, Made these tonight, fun part was getting the blowtorch out. We put a little garlic paste in the potatoes was about the only change. They fed 6 people and we will be making them again! It really completes the food pyramid! Lol. Thank you both so much for sharing!
