Steaks on the Weber Little Smokey

Prime ribeye's and filets grilled on my Weber Little Smokey charcoal grill camp side. These steaks always come out so delicious cooked this way.

    Adam, I believe you have single handedly inspired me to up my bbq game. Have just invested in some Bluetooth meat thermometers and a new grill with attached smoker. Thank you for keeping me entertained over these last few months. The best of health to you and your family!

    A trick I use here in Oz with the corn, is to cook em in the leaves. First you peel the sleeves back enough to put a lump of butter in and re wrap. Place em in the BBQ until the leaves start to burn, char ( turn them a time or two if needed) the corn comes out moist n buttery, with no burnt kernels.

    Cooked just right Adam.. I hear that smoked Mac & Cheese is a good flavor. I have to say, you folks must go to an old school butcher shop for your beef and sausage needs. Those steaks you often cook are trimmed just right and always cut thicker for a BBQ. One day or on one trip, get some corn in the natural husk, trim off the loose leaves & hair and then soak the corn in a pot of water for 5 to 10 minutes. Put them on a medium hot grill for about 30 to 45 minutes. Some of the husk might get browned or black, no worry there. Pull them and let them rest for 10 minutes or so then remove the husk just before eating them. You won't need any butter or seasoning as the husk flavors the corn during the cook releasing the sweetness and juices on the corn kernels. We didn't think we'd like them without adding some butter or seasoning however, after trying this, they are amazingly flavorful without anything but the natural juices from the husks.     I typically buy from the butcher shop now. They always have plenty of steaks cut and packaged ready for you but I always ask for a thicker cut steak. I like mine 1-1/4” - 1-1/2” thick. I think the quality of meat you buy there is superior to the super markets most folks shop at. I’ll give the corn a try. I have cooked it like that but it’s been probably 10 years or more. I was also told to soak it in salt water, or add salt to the water while it soaks. 👍🏻

    @@AbomAdventures The exciting part is, how good it tastes without anything on them, all natural and good which usually "all natural" means less flavor on most stuff.

    @@Garth2011 I'll have to try soaking them. I usually cook them like you said with the husk, but just a quick rinse instead of the soak. Pull them and rest for a few minutes, then husk and add butter and some Tony Chachere's. Thanks for the idea, always looking for new things to try. The husk definitely helps keep moisture in the kernels during the cook.

    Pecan wood is the nectar if life for barbecue. This tells me that you know your barbecue. I like something from all barbecue places however personally, I prefer low and slow with pecan wood. Good to see you guys out having some fun. Enjoy, stay safe... Joe

    You started a timer but never said how long you grilled the meat before flipping or how long after flipping. The finished product looked great, but without the cook times it doesn't help me much.

    Time doesn’t matter, only internal temp. Get a thermometer and become a grill master.

    get a feel for your temperatures then the “time” comes in after. Gotta know how hot your grill is running before worrying about flipping

    How long did it take the corn to be done? Could you add cook time info to the cooking vids? Always a pleasure to see all your fine meals sir. Also I’ve found that adding prime rib rub to my steaks has been my favorite way to go. Just put it on a hour or so before cooking and the taste is amazing. I buy Excalibur’s brand from Walton’s. It’s a great place to order rubs and spices and utensils for smoking.

    The corn takes 30-45 minutes, depends on how hot the coals basket is. When they’re hanging I usually gage them by how it looks & feels.

    I oil the steaks before I set them on the hot grill. When I season them I make sure the steak is dry.

    Steaks look great. I have been wanting a smoker but others have said if they aren't cleaned pretty soon after using, they will mold. How do you clean your smoker?

    Everything looked good except the steaks didn’t have a crust. I like to sear my steaks first then grill them in indirect heat.

    How long was the cook on the steaks? Did you flip them? Not much of an informative video. This I can tell you....when you're lookin, you ain't cookin🤔

    You ever cure your own bacon? Highly recommended if you haven’t. I promise, good piece of pork belly cured and smoked on your pit barrel you won’t ever buy bacon again!

    Steaks that good deserve to be eaten of something more refined than paper plates , not a fan of the paper plate and plastic cutlery : )
