Small piece cinnamon
2 Tsp Cumin seeds
½ Tsp Fennel seeds
½ Tsp Black peppercorns
5 Cardamom pods
1 Tsp Black mustard seeds
5 Large Onions
6 Green finger chillies
2 Tbsp Ghee
4 Large Cloves Garlic
Equal amount of fresh ginger
2 Tsp Turmeric
3 Tbsp Mild Madras Curry Powder OR Al’s Mixed Powder
1 Tbsp Tandoori masala
2 Tbsp Garam Masala
2 Tsp Extra Hot Chilli Powder
2 Tins Chopped Tomatoes (or 1 Tin if you want to lessen the tomato dominance)
1 Tsp Salt
(Optional 1 Black Cardamom for smokey flavour)

I’m so grateful for your channel. Been watching you for years now. I have Indian heritage and do not know much about my family history and only learned to cook a few traditional dishes from my mum. About a year before she died I made her one of the dishes she taught me and accompanied that meal with several of your recipes. She was absolutely blown away and showered the meal with praise… and she wasn’t the kind of person to give compliments. Today is my fathers birthday (he’s passed on too) and this staff curry is what I’ll make tonight for my family as we think of him. Thank you, Al. Massive respect for your passion and authenticity. ❤
Great video, mate. There's something comforting about watching and listening to British people. It's why I watch The Great British Bake Off. And what you said about getting your mind off your world's worries is spot on. I suffer from depression myself, and always look forward to trying out new recipes because you get lost in the drudgery of certain parts, genuinely enjoy others, and look forward in anticipation to trying the finished dish, as well as thinking up ways to improve it (I love tinkering with recipes until I get them as close to perfection as I can.) Food is something none of us can get away from (we have to eat), is incredibly powerful as a way of bringing us together, and the prospect of making a recipe that'll stay with me for life (and possibly be passed on to other generations) is as motivating as it is rewarding.
Al, what a amazing cook you are and you are right it does lift you out of depression. Thank you once again

Discovering your channel is like being let in on a dark secret! After making a batch of base gravy last weekend, I've made Chicken Jalfezi, Chicken Korma, and Chicken Methi and they've all been amazing. I asked my other half which he liked best and he really couldn't decide. Well done Al, you opened a fantastic new culinary door which has reignited my enthusiasm for cooking. Base gravies are prepared both in Indian restaurants in India as well as in the UK to speed up the cooking process, else customers need to wait for hours to get their tikka masala, makhani, korma, pasanda, chettinad, etc delivered. However, the total number of ingredients wouldn't vary, whether you prepare it with base gravy or without it, unless you voluntarily choose to omit a few of them which would change the taste of that dish.
This guy seems like a genuinely good guy. Always great to see and a wonderful recipe as well!

I never used to enjoy cooking AT ALL until I was invited to the secret curry club. On there I fell upon one of your videos and the rest is history. Now I love cooking curries and starters and I cook almost every week. You have inspired me this year and we don't buy takeaway because they just don't match up anymore. I love the balance of recipes between those containing base gravy and also the ones that don't require it. My family, friends and work colleagues are so impressed that its costing me a fortune but its so worth it. You are an inspiration and now I have an obsession. Have you tried his five spice chicken Madras? It's bang on. I'm a lifelong Madras eater and he's spot on with it. Super quick as well. I've got s freezer drawer full of it 😆

I made this last night and was so good. I had to adjust though as didn’t have chicken thighs and for the first time ever no tinned tomatoes! Tomato purée and some fresh tomatoes in there had to do, but still worked really well. I cut up some chicken breast and added in for just me and was a reasonably quick mid week dinner. Will definitely make again cheers Al.

having boned meat stew in the pot of the curry will add some much more flavor as you get all the fat from the meat melting into it
And just when I've run out of base gravy, Al pops up with a no base gravy recipe! Either a genius or a mind reader, either way round this is a must try, nice one Al, keep them coming!👍

I've found base gravy is not suited for home cooking. Much prefer taking the time to fry onions and getting them lovely and smoky + sweet

@@briegoudon3000 base gravy is great if you can freeze it all. I just freeze them in my deep freeze in portions, I still fry onions because I'm a freak.

I made this last week as per the recipe and it was amazing. I made it again today all the way up to adding the chicken but replaced it with chick peas, spinach and loads of mushrooms. I’m not vegetarian but omg it was so good. I did add a couple of spoons of yogurt and very thick cream. So obviously nothing like the proper recipe but it was soooo good. I was worried about putting half a bowl of spices in but it works so well.

I am vegan and trying to adapt, but also don’t use oil so not sure if it will alter taste too much

I always ask for the Staff Curry, and usually get told that it's the Handi, which in all honesty is very good, but it's usually cooked off the bone, and you don't get that richness. Thanks so much for this video 👍👍👍

Literally obsessed by this curry , discovered a couple of weeks ago and cooked 3 times since. Its so so easy once prepped spices etc and like Al says you can just chuck it all together and turns out amazing every time. Thanks Al for another fantastic recipe
