    Been watching your vids for a year or so. Love the cooking because that is the food I was raised on. Keep it up. I am 60 this year and know from my grandparents that this world is gonna get worse before it ever gets better. You have a friend in south Alabama.

    While I have no way of knowing how much effort is truly expended behind the scenes prior to filming these segments, the end result is both extremely informative and entertaining. There appears to be so much more happening beyond the lens of your camera that’s equally vital to the success of your chosen life-style. But to date they remain a mystery to all but the local inhabitants from that most beautiful part of this country.

    looks delicious.. great vid! i too am a big fan of squirrel. as you said, their very abundant. up here in the north as well. i eat them very often, but havent tried them that way. will def try that recipe

    Mmmmm. I remember we used to take a couple of squirrels to my Grandmother and she would fry them and make gravy and cook them in it and hand-make some big biscuits. Fond memories. I'm glad to see some people in this current generation know how to not only enjoy stuff like this, but actually make it. Great vid. You keep doing what you're doing.

    I grew up on fried squirrel and squirrel gravy was a must in my house growing up, but I am 42 now and its probably been 25 years since I had some. So I decided that maybe I should go out and shoot a few to fry up after watching your video. Your way of cooking it up looked great. I also have some okra frozen that came out of the garden this year and that looked like a perfect side. Your video really got me to thinking about how long it has been since I enjoyed a meal like that. Nicely done.

    Wow, brought a tear my eye from where and when the squirrel were plentiful. Great job preparing; I'm sure your is delicious. When I used to fly all over SE Asia, I learned to marinate in a combination of soy sauce, corn starch, and wine (sherry mostly) for a few hours and then fry hot and continue like you do. The corn starch gives a rich silly finish and the sweetness of the squirrel really comes out. Thanks for the treat. I'm looking forward to more of your kitchen craft.

    At the end, I pulled everything out, and I thickened the gravy with a roux. Then I threw everything back in the gravy, and served it over egg noodles. It was freakin' amazing! I can't wait to go hunting again! I will also try this with cottontails! My son loves noodles, but next time it will go over wild rice for me!

    it will thicken some on its own but you can add a thickener like flour while frying the meat or brown gravy mix

    I used to cook my squirrels in a crockpot/slow cooker after the typical browning as you've done here. However, ever since I got my pressure cooker several years ago that's how I cook them now. Hours of cooking, either stovetop or in a crockpot/slow cooker is reduced to about 30 minutes. And I ALWAYS add a ton of mushrooms, usually whatever wild mushrooms I have on hand. Typically Chicken of the Woods, Hen of the Woods and Oyster. And I use stock or broth instead of water.

    The sguirrel really looks good I have to try your way,I dredge the squirrel in flour and brown it then make gravy your way looking good thanks for the new idea.

    I've heard of it but have never maid it. I'm not a big fan of dumplings but you could make it the same way. Just make the gravy as I did and instead of rice just make bread dough and throw it in the gray pot on boil until the dough cooks. To make it even simpler just get a few cans of pilsbury biscuits, cut each raw biscuit into 4 pieces and throw those in the pot to cook.

    Love your videos, they're great teaching tools, thank you for sharing your knowledge. Have you done any videos on making jerky? I love jerky, but hate store prices and having to depend on the game processing shops around here that have been known to make people sick.

    i do use olive oil simply because it's healthier but you can use regular cooking oil and i just put enough to coat the bottom of the pot so the meat doesn't stick and burn but not enough for the meat to me sitting in oil.

    lol thank you and I'd love to know the answer to that myself... as for the river statement. What animals are eating and drinking effects the taste of the meat. Animals living near a very large river or swamp tend to have a slightly muskier taste.

    i don't know what it is but most game near a large river has a slightly stronger taste. Squirrels not as much as other animals though. But if you clean them under running warm water like we showed you it won't matter either way. These were killed near the river and were not marinated or anything and they were mild and tender.

    I have a seasoning that actually doubles as a chicken coating. Brown the squirrel in an iron skillet, then finish it off in the oven. If the squirrel is tougher than a two dollar steak, this often helps it a bit. In the field, I roast over fire, which is good as well. I can't think of any gravy better than squirrel gravy. Had it all my life, and it's the best. You do a good job, keep up the good work! - C.J.

    yea. Cook it until it starts to fall off the bone so you know it's tender. And yes it was over rice.

    yea wild game is more nutritious and fills you up faster. We fried up some yellow catfish and shrimp last night and were talking about how little it takes with wild game to fill up cause you're body gets what it needs with less consumption.

    it verys but roughly about 15 minutes frying and about 30-45 minutes with the water

    it turns out tender the way i cook it. You can do it in a pressure cooker but the taste is much better this way

    Does it taste gamey? I am in culinary school and would like to try preparing squirrel however it's not readily available in Miami. Are you able to pack in dry ice and ship? I hope that's not a silly question.

    how is squirrel unclean? They eat nuts. It's one of the cleanest and safest meats there is.

    I grew up eating squirrel, rabbit, pheasant, quail, and venison of course, Me and my dad always kept our freezer full of wild game. I hated duck hunting though. I was always wet and cold. Good video!

    most times it won't matter unless it's a big river or swampy area in which case the things they are eating and drinking will alter the taste of the meat.

    It was very good. I think it needed to cook longer though. Squirrel was still a little tough but taste was great. Next time I do it I will add some thickening agent so it's not quite so runny.

    You can BBQ a young squirrel. But this recipe is way better for old squirrels. I've used this recipe before and am doing it again tonight with rabbit and squirrel combined because I love it so much! My squirrel tonight is very old. I know because it was a male and his balls were black and hairless. A young squirrel will have buff hair and small balls, or no balls at all. I don't know about female squirrels. Hope that helps!     I never bake or fry meat anymore. I just put it in a crock pot or pan with a lid and set the stove on lowest possible heat with whole carrots (much better than chopped carrots. I learned that in Maine). I use zero oil, but do start out with a cup of water. At lowest heat, I can go to work in the morning, come home at 5 or 6 pm, and mmm mmm. The meat will be tender, and the flavor of everything is preserved. I use one or two whole onions that I do not cut up until everything is done. Big tip: If you're going to make potatoes at all, do not, I say do not cook them with the other meat and vegetables. A potato will suck all of the flavor out of the meat and neutralize the flavor.

    I didn't read all the comments so I'm hoping I'm not asking a redundant question. Because squirrel meat is not tender, have you considered starting the cooking process using a pressure cooker and finishing off the gravy or stew in the same pot?

    i don't know why youtube did that. They've never age restricted the other animal cleaning vids. But they put a restriction on it for graphic content. I guess because of the blood and guts. You may need to check the age on your account and make sure it's set correctly.

    no. Most squirrel traps are cage traps so it would be alive and unharmed in the trap

    looks good! This is my first year that I did the squirrel hunting and I have 8 in the freezer so far. I think I will try this but brown my meat in a separate pot and make a roux then add onions and bell pepper. add the meat in with the water after the onions are cooked. (btw I have that same chopper and cutting board! cutting board was bought at the Angola prison rodeo)
