A wonderful variation on Spaghetti Alla Nerano! Looks fabulous, I'll definitely try this, because when I first tried Alla Nerano, I wondered whether eggplant would work too. Now I have my answer!

I love your creativity and focus on 'simple and high quality'. I've done similar - turns out that you can make pretty much any vegetable into a sauce when you cook it down like this, and it's a great way to add some variety to your pasta dishes (beyond a tomato base or a cream base) and to show off how versatile it can be! (A zucchini base with pancetta and pecorino is another phenomenal combination!). And I gotta say I love Whiskey too - what a good boy!

I love to make this as I love eggplant and even enjoy making moussaka when I have time. One thing that I do is to roast the garlic, it makes a lovely compliment to the eggplant and especially in this dish with spaghetti.) Of course, jmo.
