STEP 1 - CHOOSING A RIGHT FILTER

The South indian filter comes in various sizes. I have extra small and large size (as shown in the below pic). Decoction tastes best when brewed fresh. But brewing the night before or keeping for upto a day totally is fine. Make sure to use a vacuum sealed glass jar.
Filter comes with a drip container with holes, another container to catch the decoction. A damper to press the coffee powder and a lid. Depending on how many cups of coffee you want to make choose the right size.
STEP 2- SELECTING COFFEE BEAN

Important part of brewing best coffee is finding the right bean that you love. Most of the coffee powder in retail / grocery store use 80 % coffee and 20 % chicory. This ratio is preferred because it gives thick decoction.
If you live in indian (especially south indian), there are few best coffee powder option which I love,
Lingam coffee - west mambalam, chennai
Coffee day - No chicory coffee (pb)
Hotel Annapurna - coimbatore
Leo - Madras blend

STEP 3 - BREWING

Next step is to brew a flavorful coffee. First and foremost invest in a good south Indian filter. Few importance tips to brew a perfect filter coffee.
Grinding coffee bean - Do not over fill the grinder. Make sure to stir in between. Grinding anywhere from 40 - 60 secs gives a good consistency. The coffee grinder I own -
Water to brew - The water should be hot but not boiling hot. Steaming hot is the right temperature. Very hot water will leave a bitter tasting coffee.
Make sure the filter is dry and loosely fill 1/2 or 2/3 of the filter with ground coffee powder , then with the damper, slight press the coffee powder. If you press too tightly, it wont flow and if it isn't pressed tight, all water flows right down. Then add steaming water over damper and fill only 3/4th way.
Wait for the water to get frothy and make decoction, one drop and a time. Then store that decoction in a different container. That's first decoction. First decoction is usually thick and has concentrated flavor and aroma.
Then when add water to make second decoction. Since we are only 2 coffee drinking people at home. We add both first and second decoction together.
STEP 4 - MAKE FILTER COFFEE

Bring the milk to boil.Add sugar (optional), decoction and milk. Serve in davara and tumbler.
Few pointers to note,
--- Don't over fill with water while making coffee, it may cause spillage.
---Don't stir or shake the filter. Patience is the key. If you wish you can take the damper out to speed up the process a bit. It approximately takes 10 - 15 mins for the first decoction to be collected.
---As mentioned earlier, make sure to check the water temperature and coffee powder should be finely ground.
-- Never reheat the mixed coffee. Always keep boiled milk and decoction ready. Reheat just the milk and add it to the decoction.

    My coffee is so thin when I brew it, also what kind of milk do I use? Regular 2% milk doesn't come to a boil !

    I use whole milk. Damper it really well. Also if you are used to chicory mixed coffee this is lighter than that. ,

    I have not tried robusta. We buy indian malabar coffee beans, without chicory. The link for it is in description. Even back home, we buy pure coffee without chicory. Chicory is helpful when you are looking for thicker decoction. I suggest buy a light roasted coffee of your preferred flavor. Hope this is helpful

    Which coffee seed is best?i live in new zealand and im not sure which seed to use as there is a huge variety and also do we need to roast them before grinding

    Hi Kavya, try to go through my blog post to see if you find a brand you can get there. Unfortunately I am not aware of what is available locally or online in new zealand. I always look for indian malabar bean. If I am not able to find it then i would go get a arabic or any mild roasted bean

    Kavyaravy no need. Roasting at home takes effort and care. Buy roasted beans which are much easily available, than green beans. Just make sure of the date they are roasted.

    I bought ground roasted coffee without chicory but the brew is very light. I am someone who takes my coffee very very strong...dont know what I'm doing wrong...can someone help

    Here in USA, I have noticed I need to grind again to get the consistency of our coffee consistency. That's one of the main reasons why we grind at home.

    Very nice. Chicory less coffee is usually thinner than the added one. Also trying pressing with a damper before adding hot water. Hope it helps

    Yes, flavor is definitely stronger and fresh. Chicory will help to give a thick decoction.

    French press doesn't give decoction. Which infact won't make that perfect filter coffee. However you can make coffee using french press and flavor the coffee with milk or creamer.
