    @@darpansharma8157 - You can't use instant coffee powder. You'll need to get coffee powder from a store that roasts and grinds coffee beans. Or you can buy it online from brands like Kothas and many others.

    A boss of mine used to say , " Tea for doers, coffee is for thinkers"... I agreed on occasions, but not always. So many years later I now mostly agree with him. When I want to work on something, like clean my room I drink tea, and when I want to create a power point presentation or learn a new skill, I drink coffee. (Both need to be KADAK, not with too much milk)

    A simpler way of making decoction is: Boil water in a steel vessel. When water starts boiling add coffee chicory mix as per desired strength you prefer. Mix & once the whole thing swells up, switch off the flame. Keep milk to heat & add sugar. In the meantime sprinkle cold water with your hands over the decoction, this immediately settles the coffee particles. Now add the decoction to hot milk and pour 2-3 times into steel glass from milk vessel & your steaming hot filter coffee is ready instantly! My mom’s secret recipe when we have unannounced guests 😃

    You leave the umbrella in the filter ( if you notice it has a few holes too) it perculates coffee much slower and hence "thicker decoction" Also our moms make this early morning instead of night and the aroma wakes the whole family up. In the most traditional homes, we keep the beans which is roasted and crushed every morning to get the freshest juice. (all this happens around 3am) Finally don't miss the second decoction and third decoction - which is what the outer circle gets at home. Only 'father' gets the best first few ounces of strong decoction in their coffee ☕

    Wow. We will also make it at home. 👌 But powder we will bring from outside. Green label brand. where to get the beans and the process of mixing up we don't know. 😒 If possible please share the details.

    @@krishnamadhura6957 earlier we used to go to the specific "coffee works" shops where you get to mix your blend (different coffee bean variants like plantation, peaberry etc. ) with chicory (purist don't use chicory). Chicory is not coffee, it's a root which is cheap and adds thickness to coffee. The grinding itself is slightly coarse so that it doesn't seep through the filter into the decoction . Nowadays, you get this from major FMCG brands, my personal favorite is "Kothas coffee" but mainstream brands like Bru Greenlabel also have this. Make sure the chicory %ge is less than 25 for a half decent blend.

    Chicory was added into coffee grounds as an adulterant, later chicory became the taste maker of South Indian filter coffee. We got used to the woody, earthy flavor that now, chicory became an indispensable ingredient in filter coffee. 🤗

    When I was in chennai during my engineering....I got addicted to this filter coffee.......I am still a tea person though as a north indian but yes now I miss this filter coffee......best coffee I ever head was in 1. My collage cantin, 2.Tambram railway station , 3. Chennai beach railway station , 4. Sarvana coffee house ......some time I miss south India .......I will definitely go back to south in future 😁😁

    As someone who has been to the US many times and is currently studying there, there is no coffee in the world that tastes better than filter coffee and Indian coffee is, in my personal opinion, much superior to regular American coffee.

    3:05 It may be a good idea to leave in the plunger before pouring hot water. It helps keep the coffee powder settled instead of getting disturbed and floating up when hot water is poured in

    Yes what you said is right. The plunger HAS to be put in on top of the powder. There are holes in the plunger which let the hot water percolate evenly onto the powder without disturbing the layer. This has been omitted in the video. And the powder should be fine not granular. Water will quickly seep down the granules and the decoction will be dilute and weak as there was no time for the powder to give up its essence.

    ⁠@@shyamopriyamoitra1474Buy from the authentic filter coffee brands like Cothas filter coffee and Malgudi Continental (has various coffee-chicori ratios). If you live in northern India and find difficult to find these brands, you can always get Bru Green Label filter coffee although it would be my last choice but something is better than nothing! 😊

    I am from Kolkata. It is dotted with small South Indian restaurants. So , growing up got pretty much used to South Indian food and needless to say the coffee too. Then moved to Mumbai for work and kept having filter coffee there. Hence bought myself a filter and indulge myself sometimes. I have many friends from the South where I now live and they all know my love for filter coffee. In certain localities in Kolkata, the aroma of filter coffee fills the air in the morning. It's so amazing!

    I am a South Indian and drink only filter coffee for so many years. No readymade coffee powder used in the last 30 years. If no filter coffee, tea preferred. Nicely explained.

    Traditional Vietnamese coffee as well useses a similar type of filter. They use condensed sweet milk instead of fresh and most popular form is with ice, called Cafe Sua Da (Sua = Milk, Da = Ice). It’s a killer too.

    My son born and bred in Australia, loves a filter coffee. Here in Australia, we can get a variety of coffee beans, however to get our favorite decoction, I use 50% Plantation A beans and 50% Pee-berry beans.

    I'm a South in my 60s and as I wasn't raised in South India, always wanted to know how to make filter coffee. People have explained- but start with a " Oh it's so easy.     I am a die hard South Indian coffee addict and my kids have now joined me. We carry our coffee powder and our South Indian copper filter wherever we travel, even to South!! We have always poured hot water with the weight inside the filter. Will now try it differently. Also the sieve method is a new learning. Thanks 🙏

    This filter I got from India and sitting here for ever. And I realized, I was making decoction coffee entirely different. Thank you so much Varun for explaining it extremely well and clear that no room for doubt. I bought some wonderful filter coffee last week, and I am going to use my machine today !!     Thank you for sharing. An important ingredient to add while making decoction - a pinch of salt and a pinch of sugar. It will caramelize the process and salt is a wonderful taste that with each sip you need to feel. Try this along to feel magic 😃🙏. Stay safe. Stay healthy !!

    Blore has the best filter coffee like this. But I like Mysore or Coorg side when they make filter coffee. 80-20 is my favourite too.

    I have tasted coffees world wide. Yes as 'authentic' as they say it is ...all those place. I can confirm based on my 30 years of travel, South Indian Filter Coffee, beats all of them -hands donw!!

    No need to make the decoction previous night, with in ten minutes you can prepare freshly in the morning. I am also a South Indian , of course we prepare coffee everyday morning and evening,some time we will prepare more than two times, if we make it every day ,freshly. If you want fresh coffee,you should make it fresh , if it is not hot, we will not put it on the gas directly ,so that the freshness should not go, we will boil water In a sauce pan and keep the steel tumbler in it and make it hot.

    In my household everyday we do this... I especially wake up to have coffee.... 6 30 am decotion prepared and then newspaper..... Timepass till 7 30am..... And in this lockdown it has become addiction now... I only wake up for the fresh coffee 😍😍😋💕

    Awesome, I’ve been making filter coffee since a while now, but I leave the press inside filter only. That way it takes more time to percolate and the coffee oil is also seen floating on the surface.

    Hey I don't have this coffee making apparatus but still make a good cup of coffee. I boil milk+water+sugar in a saucepan. Milk and water 50% each and sugar to my liking. When this comes to a rolling boil, I add a teaspoon of coffee granules to the saucepan, allow it to boil for max one minute while stirring it continuously. Turn off the stove. Leave the saucepan undisturbed for 10 seconds, and then simply strain my coffee and enjoy it

    Yes you are right. Large quantities of powder is wasted & whether we can use it for second time not mentioned. It will definitely make a dent in the pocket. It's suited for big hotels in southern India.

    @@jayaramprabhu5595 it definitely needed that much coffee powder to make a good decoction. Depends upon the quantity of chicory added you can have the second extraction from the same coffee pulp. Normally 80:20 proportion of coffee chicory gives only good decoction for the first time. 60:40 proportion gives decent decoction for the second time too.. making filter coffee for 30 years... Can't start my day without a hot cup of filter coffee

    Nothing like getting a South Indian breakfast with dosa, idli vada sambhar and finishing up with a filter kapi. It's heaven even for those who are accustomed to sausage, cold cuts of meat and weak American coffee. My mouth is watering. My preference is 80:20::coffee:chicory.
