MEAL PREP SERIES - Top 5 things to freeze for a quicker meals | Quick tips for indian cooking

Meal Prepping can be tough, especially when it comes to cooking Indian meals. I concentrate on making this journey easier and less intimidating.
Here are top 5 things you can freeze for a quicker meals.
1. Paneers - great for PBM, Kadai paneer what not.
2. Chickpeas - works wonderfully when you decide to make channa masala last minute, soups, simply add in salads.
3. Sprouted lentils - I love sprouting green moongs, although fresh is better, freezing is wonderful and gives a great crunch when added in salads or chaat (especially dahi paapi chaat)
4. Veggies for sambhar / kootu / Aviyal - frozen veggies is wonderful for wet curry's.
5. Phulka/ Paratha - I cannot stress how much frozen phulkas and paratha has saved me from a busy night dinner. A portion sized boxes and pull out as needed.

    I have kept in freezer for upto a month. I recommend freezing in batches. Not to thaw and refreeze.

    But nutrients are lost when you cut veggies and store them in fridge. If you freeze it most veggies loose their texture and nutrients at the time of blanching. The reality is recepie you thought would taste great end up like poop

    I'm not a nutritionist, but just by chopping vegetables, enzymes and nutrition can be released. I store mine In a vacuum sealed container which helps contain browning and control humidity. Few of the main reasons why vegetables go bad. Please only consider what makes you and your family comfortable. Thanks.
