Made this recipe tonight. It was okay, but I was definitely thinking the same thing about how taco seasoning may have enhanced the flavor a little better.

I just need carbs, especially in winter. I crave baked potatoes, fries, tots, mashed.

🥰 This brought back memories. I started making something similar (potatoes were cooked on the stovetop instead in a cast iron skillet and topped with cheese) for my kids. It started off as a struggle meal bc we didn’t have 2things that matched 😩😂 but it was in rotation ever since. We call them taco taters. Haven’t made them in awhile.. might cook it tonight 😋
