Soft and fluffy ladi pav, perfect on gas stove & in oven with 35 year old recipe| Poonam's Kitchen

Ladi pav, also known as 'pav', is a popular street food all across India. 35 years ago, that is in 1985 when I was a very young kid, I was getting interested in learning cooking. In the Summer break after final exams, I attended a set of cooking and baking classes to learn new dishes that were not cooked at our home. I was probably the youngest student in class! I still have that diary where I wrote all my recipes from those classes. Those recipes were foolproof! I realized much later in life what a great teacher was the lady who taught us in those sessions. These recipes followed to the t never failed me. Of course if you do not follow all the tips then results would differ. I have shared one such result in the video itself, along with perfect results too!
That's the story behind this recipe, and many more that I will continue to share from my recipe book! Thanks for reading through this memorable event from my life.

All purpose flour/ Maida 2 cup/250 gm
Milk 1 cup + a little extra
Active dry yeast Yeast 1 1/2 tsp
Sugar 1 1/2 tsp
Butter 2 tbsp
Oil for greasing

    Preeti, bread recipe is a little different. This dough baked in bread mould will taste and have texture like pav only

    Neha, yeast is the best option. Other things do not give as good results

    Mahima, thank you very much for the appreciation. I personally don't use food processor for dough for any of the breads, but people do use. It is doable but be careful. One cannot overknead a dough by hand, but easily overdo when you knead in a machine!

    Will surely try my hands in making this pav. Please tell me if I can use whole wheat flour instead of maida. Or can I use whole wheat flour and maida together and in what proportion.

    Kriti, thanks for checking out the recipe. You could use the same recipe for 50-50 maida and whole wheat flour, however the resulting pav will not be as soft. 100% whole wheat will give dense pavs.

    Poonam ji I kept on kneading the dough for more than 15 mins before first proofing but the dough kept on sticking to my hand. It wasn't sticking to the cutting board though. Any tips on this?

    Swati, periodically apply oil on both your hands and dough would eventually not stick to hands.

    Hi...yes you are right. Instant yeast to be used directly in the recipe however you would need only 1 1/4 tsp of instant yeast in place of 1 1/2 tsp active dry yeast

    I have used active dry yeast for the recipe. If you mean instant yeast then it would be 1 1/4 tsp

    @@anandhibalakrishnan2188 For this recipe with 2 cups of flour, you need to add 1 and 1/2 teaspoon active dry yeast. Else you could add 1 and 1/4 tsp instant yeast

    Shona, there's no good replacement of yeast. There are other ingredients that can leaven bread but not with such good results

    Saroj, we have to buy sand here in the US. It's available for free in India depending on the terrain. Salt is a great substitute. People also bake without sand or salt. I have never tried that.
