Smoked Ribs For Beginners | 321 Ribs On A Pellet Grill

In today's video, I am smoking up ribs, 321 style. I often see others suggesting the 321 method for smoking ribs for beginners, but I have never tried it myself. Well, that all changed with this video, because I did 321 on my Z Grills Pellet Grill! Now, ribs on your pellet grill or pellet smoker couldn't be easier, but then you throw this 321 method for ribs into mix, and it certainly is a good starting point if your a beginner to smoking ribs! I will admit the color, and flavor was spot on, but I think they were too tender for me (is that even a thing?) but that being said, a lot of people LOVE fall off the bones, and if you're one of those people, this video is for you! Smoking ribs for beginners doesn't have to be daunting, or hard. If you follow this 321 method for smoked ribs, I can ensure that folks will be loving them! Cooking ribs is a great starting point if you're new to the pellet grill or pellet smoker world, or even you you're a beginner smoking ribs in general Be sure to leave me a comment if you've cook this 321 method before, or if you give it a try!     Over the years I've tried ribs so many ways! 3-2-1, foil, butcher paper, spritz, mop, you name it. I finally settled on no-wrap at 275°F for three and a half hours and have never looked back. Spritz after one hour in the smoke, again after two hours, at three hours brush on sauce. Out of the smoker thirty minutes later. That's it. I'm sure you can get good results other ways. I have too. But for utter simplicity and great results every time I'm ramping up the temp, spritzing every hour, and never doing a six hour cook again.

    Great video! I used this method today. I loved the way they turned out. The ribs weren't mushy. They had great color and chew. I think I will try to modify the method next time, just to see.

    Thanks Darrin. Another great video! I like ribs, period. I go back and forth between a competition style and a fall off the bone style. And there’s no real reason why I choose one over the other.     I have been using the 321 method since 2012, it has always produced a great tasting rack of ribs. My family prefers fall off the bone ribs. I use a 22 inch Weber kettle.

    Doing 3 2 1 ribs right now. I've always like the method with spare ribs, I shorten things a bit with baby back though. Usually when I do a day off cook my mom comes over and she likes the tenderest ribs possible. I've done a 2 1 1 for days I work and they turn out just fine, keeping it at 250, then 250 some more, then 300... they also turn out good. Also the 3 2 1 is good for Minnesota winters if you really wanna go outside to cook, lol.

    I usually do a 3 2 1, but I will also add a touch of apple cider vinegar to the foil along with the butter and sauce. Keeps anything from being tough, and it's fall off the bone while the meat leaves nice tooth marks. You said it best though, do your ribs how you like them!

    Looks good Darrin - and you're right, do em how YOU like em! When I do ribs I'll loosely follow a 321, but ends up being a total of 4-4.5hrs because I wrapped em sooner or took em off early after unwrapping etc. Great video - thumbs up from here!

Yeah man, I run a modified 3-2-1 as well when I’m cooking low and slow (which is rare) but my drums have been my rib cookers lately, so they’re getting done in about 2.5 hours, lol.     When I wrap mine after 3 hours I add butter, apple juice and a thin line of maple syrup then back on for 2 hours. At this stage you can get really creative. I've gone with fresh pineapple slices, sometimes adding a bit of chili garlic sauce (not too hot but good flavor). There are many things you can try but following the 3-2-1 method is guaranteed to come out far better than anything on a regular BBQ.

    That’s cool you found a system that works for you, and that’s what bbq is all about. But I respectfully disagree that 3-2-1 is better than anything else lol. It’s a nice stepping stone for beginners, but there’s no reason rubs need to cook for 6 hours to be delicious.

    Ive been doing this method for a while i recently stopped after the 2 hour wrap at 225 temp..I'll sauce if need be but for like 15-20 minutes great video i love fall off the bone but i want to try the competition way..ive grown up on fall off the bone

    I did these on the Z Grill 1000 yesterday and it was perfect for a beginner. Everyone was super impressed with my skills haha. I used a sweet rub and Bear Mountain Gourmet pellets.

    Tried about every method and the 321 method is the best in my opinion. The 2 hour apple juice part is the magic. It can be modified to 211, 221 or whatever you like based on heat and amount of ribs cooked.

    Your correct I did the 3-2-1 method yesterday. Had the same results. Too mushy for me. Think I’m going to try 3~1~1.5 next time. I think the 2 hrs wrapped steams them too much.

    I sat and listened to tons of people on here that badmouth the 3-2-1 method of cooking ribs, so I tried one of the alternative methods offered. I carefully monitored the temperature, pull-back, and softness between the ribs. Everything they said to do. They weren't good and I wasted $50 worth of ribs. NEVER AGAIN. I will stick with my 3-2-1 method! They may come out overcooked but they come out DELICIOUS EVERY TIME!

    when i do the 321 i do the 3 on smoke which is around 180 and after i wrap i do an hour and then i let them get sticky with the sauce

Honestly, I like them both, and I can’t pick one over the other. They’re both great cookers, and cook very well. Both companies have also been great to talk to, and work with. I will say, out of all of my grills, the edge goes to my new 1600, strictly because of the PID controller. BUT, the new Z Grills have PID as well, I just don’t have one to compare to the new PB, yet! Lol!

    Yeah, when started bbqing i used the 3-2-1 method but wasnt a fan. U r rite, ribs were too mushy and too fall off the bone-ish plus i cook and a little higher temp 250. For me, i found 2-1-15 to be perfect for my ribs

    I have found you can modify it to 2,2,1 or 2,2,0.5 if you want more bite. It depends on how much meat they hold. If they are not very meaty, the 3,2,1 method is way too much.

    Absolutely agree with you 100%. I think some thick ribs could definitely hold up to 3-2-1, but I'm a fan of 2-1.5-10 minutes-ish, typically. Especially since I usually run hot and fast, lol!

    I find 321 a useful guideline. But I agree they tend to be "overcooked" by competition standards. But my *actual* time is probably more 2.5-1.5-.5. And that generates good results. Especially if I baste instead of spritz.

    I've said it before, and I'll say it again "different strokes for different folks. That's the beauty of BBQ". For comps I cook on Gateway drums and get my ribs done in about 3-3.5 hours!

    @@AshKickinBBQ What do you recommend for St. Louis ribs on a pellet grill, not looking for over cooked or fall of the bone, hope you can suggest something. Have tried at 275 2 hours, then wrapped at 275 for another hour, then sauce them.

    Make sure the bark sets before you wrap, or don't wrapt at all. You can also put them back on the cooker after the wrap to let the bark set back up.

    I used 3-2-1 as a beginner.....and it overcooked my ribs every time. The meat seemed a bit mushy and lost the texture and bite. Fall off bone was one thing but could not even lift them off plate without them disintegrating. It was good to start with but I like them little different now that I have been smoking for a few years now. Typically, I put my rub on and let them sit on counter while I get smoker going and up to temp.....then put them on. After 2 hours I start spritzing and usually is a mix of 50/50 ACV and cheap bourbon LOL. When around 185-190* I put them in foil...with a heavy spritz, couple pads of real butter, and a good squirt of local honey. About 20-30 min from being done....I unwrap but leave sitting on foil just opening the top folds to let steam out...and may do a light dusting of my rub (SimplyMarvelous Pecan) and let exterior firm up...then pull and let rest when get to about 201-203*. Time and temps depend on ambient temp, humidity, wind, size of racks, etc......but typically a pack from Costco (3x St Louis Rib racks) take about 4 hours maybe 4.5 hours depending on all the mentioned factors. Can throw some sauce on at final stage instead of rub...but I leave mine unsauced for those that like the meat alone...and put our local yellow mustard sauce and some tomato based sauce on table for those that want to add their own. In the end in addition to the mushy too soft meat texture....they seem to be drier. I like the rendered fat still in the meat.

    @@AshKickinBBQ fair point but it also depends on the smoking method. I just recently ordered a pellet and I’m waiting on delivery. But I’m down here in Texas and we (my family) cook over season pecan and oak logs. So we get plenty of smoke in those four hours and the meat is tender but still has good bite. But appreciate the vid bc I’ve been binging on pellet grill cook vids… can’t wait!

    I don’t know who came up with 321 but I’m not a fan. That being said the majority of people like fall off the bone. Works ok for a sandwich IMO but I’d rather do pulled pork. Drives me nuts when people say it’s comp style, it’s just good ribs. :) Have a great weekend brother!

    Silly question, once you pull them and wrap them in foil, would you have the same result if you finished them in the oven in the house? With all that foil, they would no longer take on smoke flavor?

    You can definitely put them in the oven during the wrap, but they’re going back on the cooker to set the sauce and the smoke helps with that glaze…so up to you

    When I 3-2-1 I use apple juice to spritz and keep my ribs moist. There isn't a right and wrong way, just as long as they taste good.

    When I did 321 I ran mine at 180* for the first 3 hours. Once I wrapped I turned up to 225*. Ditched the foil once I sauced also and was happy with the finished result. But they sure do look delicious.

    Nice, maybe I will have to give that a whirl. I personally think 225º the entire cook is way too high for 321 ribs, but perhaps 180-200 may yield a better final product! Thanks for watching man!

    Whether I am doing baby backs or spare ribs, I want to be able to pull the bone out cleanly. While I like eating ribs off the bone, I don't want to struggle with them. And, I like to make rib sandwiches on toasted hoagie rolls. To each their own.

    I honestly don’t think so. I think it’s the overall internal temp that makes them mushy, and truth be told I’m not a fan of paper with pork.

    @@AshKickinBBQ I've not done ribs yet, but plan to do so, soon once the weather is more conducive to outdoor activities here in upstate NY. LOL So, I thought I'd ask. I'd rather them have a bit of a bite to them rather than fall completely off the bone, so it sounds like the 3-2-1 method may not offer the bite I'm looking for. And I would look forward to see if the results if you did a foil - vs - paper comparison video!

    Do you prefer St. Louis style ribs over baby back is there a big difference? Also if someone wanted to do a dry rub over wet style ribs what would you recommend doing for those?

    Hey man, I prefer St. Louis myself. I find them more meatier, and easier to cook to perfection. If you're going for a dry rub, just don't wrap, and don't sauce. I'll have a video coming on that soon!

    Interesting… The three, two, one method I am familiar with, you wrap them in foil and put them in a cooler for the last hour, not on the grill for the last hour. I would welcome anyone else’s opinion on this, as I thought that was the 321 method.

    Because they get mushy. If you want pulled pork, cook a pork butt. But alas, it’s personal preference. Cook them how you like

    I like to cook at 275-300...cook until the color I want is there, and cook to tenderness. Usually about 3-4 hours, tops.

    Darrin, first time smoking on my new z grills. Everything was fine for the first 3 hours, 225 degrees. Pulled them out and wrapped in butcher paper with some sauce and butter, at around the 5 hour mark I noticed grease fire probably due to butter getting out of the butcher paper. Before it messed up my cook I pulled it out. They tasted very good still but didn’t get that last hour in. Any suggestions for future?

    OK you should be careful when you say cook them however you like somebody’s gonna boil them. LOL those actually look pretty good I’m trying 3 2 1 ribs tonight not exactly how you’ve done them but I am hoping they taste pretty good I’m sure they will.
