Benny is a professional and he makes this thing look easy. In addition to skill you have to be strong to punch through the skin as he did.

I was wondering about that. Also, I don't have a lifting apparatus and I notice Benny always seems to use one. I've got much smaller lambs (breed wise) but still thinking maybe I won't be able to lift the carcass. Geez, so much goes into meat eating, it seems!

Hey Benny, I had a old dorper sheep that died of natural causes so thought I’d give it a go, just practice not eating. Are dorpers harder to skin or old and dehydrated effects skinning process, skin was tearing off in chunks. Thanks heaps, watched my pop as a kid but I never skinned anything other then a rabbit.cheers

hey Benny, I love your videos. I too also do a bit of home butchering of lamb. I was wondering, do you need to make sure the carcass is completely dry when you hang them in the cool room? And what temperature do you chill them at? Thanks

Rub the carcas with concentrated salt solution then rinse and pat dry before hanging

Thanks mate, No they don't have to be dry, they dry off while hanging. I hang them for a week between 1-4 Degrees Celsius.

Thanks Benny for sharing this. I've got some lambs that I've raised well and very much want to butcher but, with no small local abattoir around me, I need to confront doing this myself (which I probably should anyway). If I am just doing this, say, once a year, is there a good all-round knife you could recommend? And for the hanging, rather than hang one way before and another after skinning, you can just do it hanging by back legs, yeah? Sorry for all the questions!

I would recommend the Dexter Russell high carbon lamb skinning knife, they're not stainless so need to be oiled to ensure they don't rust but they keep an unreal edge. Look for a lamb knife I use a Mitchell 5” but f dick do them great all round for lamb processing skinning gutting

Great video. I have processed beef and swine before and alway manage to cut thru hide. This makes me feel much beter about saving the pelt to be processed. Would you hang from the back legs to bleed if saving the pelt to keep blood off? How would you dispatch if saving skull also? These are Jacobs sheep we will be working with.

Did this with of 2 of my mates merino sheep to make horse saddle pad covers out of them. Ended up with so much that we made a sheepskin cover for an under saddle shock absorbing gel pad we had then also made saddle seat savers to go over the saddles

I tried to skin a black head sheep this weekend and I was not able to deskin it like you using just my hands. Does that depend on a sheep breed or something else?
What I’d like to learn more about is the bits to worry about like what will make a Caracas spoil and what to make sure you remove so it doesn’t

The first knife you used - is that double edged? Also, I use a cable tie (zip tie) around the pooper - keeps the crap in and creates a handy pull through.

Hi, no the both knives are single edged and I don't use any double edged knives👍. Good idea with the cable tie, anything to avoid any unwanted mishaps.

OMG, A bucket of water use to wash your hands the same time use to wash the body of lamb just easy to spread the bacteria. I just watch you how to remove inside the lamb so easy for you. Thanks for sharing.
What's the name of the first knife you used. The other I recognize from the "chuck house" ( where you buy your meat ). The first one I haven't seen. Thanks mate, have a good one.

Cheers, the 1st knife is a Dexter Russell sheep skinning knife. It's a high carbon blade so not stainless. Best knife I own👍

Also there is a different way to remove the skin, to be open small hole near one of the legs under the skin, then compress air by coprocessor air pump in side the small hole that you opened, then the air will open the skin off the meat, last you remove the skin

Great will done well done from an Egyptian butcher I have been sloughing and gutting and boning cow Cameras and goats for the last 50 year and from a family are seven generations of butchers . I like the way skinning and gutting the sheep

Awesome stuff mate. 🤙👍over the ditch here in nz. just killed myself a couple nice hggts for the house yesterday and done it the inverted method lol I first watched a guy here in nz who's a home kills butchery tht has his own utube channel who showed his viewers how to skin it the inverted style and thought I'd try something different nxt time I do myself a mutton for the house and ive just stuck with that way ever since. wicked bro keep up the awesome content 💯👍

Really similar to taking pelt and innards from deer when they're still warm. I don't know if it's true with sheep, but deer get harder to peel when cold. You might need to scrape the hide as you remove it if you have to wait.

They really need to be shorn 3-4 weeks prior to slaughter otherwise they tighten up in the skin to much. Ideally I would have liked them with shorter wool but that's not always how they come. I do a lot for other people so don't have much control how they look when I slaughter them.

The main knife with the white handle is a Dexter Russell high carbon lamb skinning knife. Great knife but just need to look after the blade as it's not stainless, so will rust.

Bled after the kill, this one was dispatched with a .22 rifle.
In Turkiye we also collect the tissue that surrounds the gut, its a sort of fat we call gömlek yağı(shirt fat) and it is used in cuisine to wrap up iç pilavı(rice with liver) or to wrap up kebabs. I recommend you use it too, it is delicious
