This lady did the job the best. This fish tastes good for almost everything. For someone who doesn't know why she spent too much time on the head, it is because the head is the best part. Yummy. And again, animal cruelty. I love animals. I even refuse to eat if I see someone kill my food in front of my eyes. But, it is the way that food is made. Where do you think your food is from? Pigs, cows, fish, etc do not automatically jump onto the table and suicide for you to cook them. And how do you kill them? Putting them in the hospital and giving them some injection so they can die "peacefully?" Get real, people. The best way to show your "love" to animals is to eat vegetable, a lottttt of vegetable, and stop going to McDonald and ordering double cheese burgers. Simple, right?

***** First, I want to tell you that you are very nice. Second, did I say that it is not ok to eat meat? Did I say it is ok to torture animals for food? Lastly, this is how fish has been killed in this country, well in many other countries as well, for thousands of years. And the movement of the fish you see here is just the muscle contraction after the brain died. By the way, do you have any better ways to kill fish? Please share. In my country Indonesia, many people in Kalimantan island eat this kind of fish. It is nice tasty fish especially for grilled smoked fish receipt. It is common fish in South Kalimantan island, usually live in muddy water. However, it is the best fish in case they live in wild muddy pond. Good video

The lady asked the customer how she wanted to cook the fish. The customer said she wanted to make a stew/soup. In Vietnam and many other parts of the world they use the fish heads to create a more flavorful broth, so that's why she left the head and didn't wastefully cut it off and discard it.

tsk...you normally dont fillet snakehead,just like carp,these guys full of bones.if you fillet them,you cut the bones smaller and make it hard to remove it when you eat.also in asia,they dont fillet fish,in western world,fish was cut into portions,in asia,they just share the fish when eating.i am a chef

The fish is dead after being clubbed in the head several times. Plus the reason it is moving is because of nerves. This is very common in other things like us humans. After death, there have been reports that people have muscle spasms, farts, and urination. This is similar as shown in the video because the fish's nerves are still active even after death. P.S. Have you heard the expression "You run around like a chicken with it's head cut off"? Pretty much the same thing that applies to this.

Not exactly Julia Child but effective.

She's skilled at what she does but is that the easiest way to clean this fish? I would fillet it and try to slice the skin off in one motion.

She's cut away most of the head which is edible. So not so skilful. Though I hate eating fish but Iv seen em eaten in my native country. It's a snake head, I love these fish. Predator and very aggressive. There are bigger variety that can reach a metre in length. Fantastic for lure fishing.

the head is one of the most expensive part (including fish organs) when it's served in the restaurant, just because of its tasty and juicy meat. It's usually used for some Vietnamese signature soup like "sweet n sour soup" in ordinary meal.
