Let's have one of my favorites, the Sinaing na Tulingan Recipe.
I discovered this dish when we visited my grandma's Batangas house. I learned to love it and after our Sunday church, one of the vendors outside would be selling this and I would definitely buy it.

*Procedure:
1. Clean the tulingan and remove the tail; some say this is poisonous.
2. Make a slit at the center on both sides and soak in water for 15 minutes to remove any blood.
3. Drain well then flatten it by pressing with your hand.
4. Rub salt on the fish and wrap it in a banana leaf.
5. For layering in a pot: put banana leaves, place the pork belly, then the dried kamias, followed by the fish arranged in alternating positions, more salt, dried kamias, vinegar then the water to cover the fish.
6. Cook for 4 hours under low heat.
7. Serve with steamed rice. Enjoy!
