• Ingredients: homemade soft bread
Egg 1(about 60 grams) 0:21,
Milk 220 grams 0:25,
Whipping cream 50 grams 0:31,
White granular sugar 50 grams 0:34,
Yeast 5 grams 0:36,
Flour 400 grams(all-purpose flour or low-protein flour) 0:53,
Powdered milk 20 grams 1:02,
Butter 20 grams 1:17,
Salt 2 grams 1:24,
4-inch cake mould 6, 3:21,
• Baking temperature(80-liter oven): preheat the oven at 180 degrees for top heat and 200 degrees for bottom heat. Keep it on lower rack of oven and bake it for 16 mins. The bread will receive more heat in a smaller oven. We suggest reducing the temperature by 5 degrees for every 10-liter reduction in oven capacity.
• The temperatures in the recipe are all in celsius degrees. Fahrenheit degree=celsius degree*1.8 + 32°F。

    能不能帮忙请教一下老爸,为什么我做的酥皮点心放凉之后不酥脆而是发硬?也掉渣也不回潮,就是口感硬邦邦的不是买来的那种入口即化的酥脆😅

    @@LBDSG1966 是说开酥的时候里面的油酥没擀匀吗?感觉也不太对啊😓有时候在吃早茶餐厅里的千层榴莲酥这类也有同样问题,人家的开酥技术应该没问题啊……
