瘦牛肉碎 350克
红薯粉条 100克
唐芹 250克
葱 30克 (2根)
生姜 15克
鸡蛋一个
五香粉 1克/ 1/2茶勺
花椒粉1克/ 1/2茶勺
白胡椒粉1克/ 1/2茶勺
盐8克/ 1茶勺
生抽 30克/ 2汤勺
温水 125克/ 半杯
面糊水
水 80克/ 1/3杯
玉米淀粉 4克/1.5茶勺
for making 60 dumplings
warm water 375g /1.5cup
yeast 6g /1.5 teaspoon
all purpose flour 600g /4 cups
salt 2g /1/4 teaspoon
fillings:
lean ground beef 350g
sweet potato noodles 100g
Chinese celery 250g
green onions 30g (2)
ginger 15g
egg 1
five spice powder 1g / 1/2 teaspoon
Sichuan peppercorn powder 1g / 1/2 teaspoon
white pepper powder 1g / 1/2 teaspoon
salt 8g / 1 teaspoon
regular soy sauce 30g / 2 tablespoons
warm water 125g / 1/2 cup
starch water:
warm water 80g /1/3 cup
corn starch 4 g /1.5 teaspoon

大家好。看到很多人求蘸料的做法。酱油, 醋,一点香油,加油泼辣子,撒上葱花和香菜就好。有时候觉得味道太重的话也会给里面加一点点水。以后有机会专门拍个特写镜头给大家看。:)

wow, thanks for such a nice comment. It is a pity that you can't understand my talking, usually I explain the science behind the cooking. Equally important as visual presentation, I believe the science will benefit the audiences more in their own journey of cooking. Hopefully, hopefully will set up the English channel soon.

Channel (and person) Maangchi does this and her videos are translated into many, many languages by her worldwide subscribers. I, too, am able to replicate your delicious recipes but have always sensed I was missing out on valuable information about the science behind the method. Many thanks from a faithful fan in Phoenix, Arizona, USA.

我家里人喜欢吃这个水煎包,特别是儿子。我拍照的时候,儿子就在边上,“拍好了没有,能不能吃啊”。后面视频中的那一盘子都被他吃光了。后期配音的时候就想起了这一段。\(^o^)/~

I saw that you explained how to make the round “skin” rotate when you were rolling it out. Really cool idea. Besides alternating the pressure of the hands it also depends on the center of the roller being thicker. I haven’t been able to find a roller that’s like that here in the US. I only understand a little Chinese, like “fei chang hao chi” is “very tasty.” Thank you.

If you have Daiso stores in your state, you can find the roller there. You can also get a piece of wooden rod for closet from Home Depot, cut to the length you like.

Irene Quach: Thank you, but I have multiple rollers that are very nice. It’s the oblong shape that’s important. You know, fatter in the middle and skinner on the ends. I have to find a person with a wood lathe and have them take down the width at the ends. Having it thicker in the middle promotes the turning of the dough without a person doing it as was demonstrated in the video.
