Mascarpone cheese is the authentic cream cheese to prepare real Italian Tiramisu. It's basically a cream cheese with a less acidic flavor. On Amazon, they sell very good authentic Italian Mascarpone, like this one amzn.to/4321QEd, while this one is very similar to Italian Mascarpone even if it is not amzn.to/439V3Ix.     I have been making tiramisu for 50+ years. When my kids were little, they did not like the coffee flavor, so I made it with Mexican hot chocolate instead, and it was a huge hit at sleepovers. Once I made two versions for a large neighborhood party, and we did a side-by-side taste test. Among 30+ tasters, 100% preferred the Mexican chocolate version over the espresso. I have never looked back, though I do pay homage to the original by decorating the top with chocolate covered espresso beans.

    To be honest, this recipe is good, but the fly in the ointment is that the yolk and egg white of the egg are mixed without any sterilization process, which will bring great food hygiene risks. The egg white can be completely omitted. Why use the egg yolk heated to 110 degrees Celsius?     Hi! Thank you for reaching out! I appreciate your question, and I'm here to help you troubleshoot the issue. These are the steps: Beat the egg yolks with a mixer, adding only half the sugar. Once the mixture is clear and frothy and the mixer is still running, you can add the mascarpone cheese little by little. In this step, you will never obtain a whipped mixture, like whipped cream, but you will get a thick cream. Hope this can help you. Let me know!

    Is all of your ingredients room temperature? Like the eggs and the mascarpone. How do you make it so that filling does not become too runny? I tried mascarpone straight from the fridge (cold), and beat it with the eggyolks with a handmixer for 20 seconds, and it immediately became runny...

    Thank you for pointing that out. With this recipe, I was telling about how my family used to make tiramisu back in the day. But nowadays, a lot of people don't feel comfortable eating raw eggs. So the traditional tiramisu recipe has changed up.     Ormai esistono tante versione del tiramisu classico: con e senza alcool, con e senza albumi, con uova pastorizzate ecc. Questa ricetta è la più antica che ho trovato, presa dal quaderno di cucina di mia nonna. Volevo solo mostrarla.

    Hi! Mascarpone cheese is the authentic cream cheese to prepare real Italian Tiramisu. It's basically a cream cheese with a less acidic flavor. If I may give you a hint, on Amazon, they sell very good authentic Italian Mascarpone, like this one amzn.to/4321QEd, while this one is very similar to Italian Mascarpone even if it is not amzn.to/439V3Ix. (Affiliate links - if you buy these products on Amazon, I earn a small percentage of the sale, but your price will remain the same.) If you want, you can replace the Mascarpone with the cream cheese of your choice, but the flavor of your Tiramisu will be a little different from the Italian one, and it will not be authentic Italian Tiramisu.

    Да, это правда, но тирамису - древний десерт, он не основан на том, как продают маскарпоне в супермаркетах! А потом я решил приготовить Тирамису на 4 порции! Однако можно умножить все на 4/3 и получится 5-6 порций. 200мл кофе 4 яйца 500 маскарпоне 85 г сахара 180 г божьих коровок какао по вкусу

    C'est la recette traditionnelle de ma famille, et je ne la trouve pas trop sucrée, cependant chacun a ses goûts, la quantité totale de sucre doit être répartie entre les jaunes d'œufs et les blancs d'œufs.

    Seriously?? raw eggs? it's safer if the yolks are cooked over double boiler,then mixed w/ the mascarapone,no nid to incorporate the eggwhites. Creamcheese beaten or blenderized w/ cream and lemon rind, is more economical than mascarapone...need to be practical and resourceful in these times....
