SEA BASS CEVICHE | Bart's Fish Tales & Martin Morales

Hi everyone! I'm in the fantastic Ceviche Old St. restaurant in London with the "King of Ceviche", Martin Morales! Martin is showing me a great ceviche from his book, the dish is called "Barranco, I Love You"; a sea bass & green mango 'tiradito'.
Barranco is an exciting district of Lima in Peru, filled with restaurants and bars where musicians, poets, writers and artists love to come. Martin named this recipe after this district because he had Barranco's vibrant spirit in mind when creating his restaurant in London.
Thank you so much for teaching me how to make a traditional Peruvian ceviche, Martin! We had a great time together and I would love to come back (or maybe go to Peru with you) soon!

    It’s not the traditional way to make ceviche but in the variety way to make it’s up to the chefs, in this particular matter is a pleasant surprise to find out its popularity in Europe specialty in London, greetings from a Peruvian who happens to live in NJ, USA

    Great recipe as always, Bart. Thanks. Coincidentally, Lion's milk (in turkey, of which i am more familiar with the culture than peru) refer to a serving of alcoholic beverage. I almost misunderstood when you said tiger milk

    Loved the recipe. Will definitely try it. We don't get Sea Bass very easily up here in Seattle. Can you recommend what other fish work well for ceviches and also if there are any very strong NOs when it comes to semi-raw fish? Thanks Bart and Martin.

    +rohan kamath Thanks for your comment Rohan! You can use most fish you like, but you have to have it really fresh! I would try it with salmon if I was in Seattle! If you want to experiment with ceviches, what about making them with scallops, shrimp/prawns or even oysters..

    I always feel fish tastes better pan-fried or seared. Not raw or partially raw, although I eat sashimi.

    Hi Jordan, I really prefer lime, as lemon is too sour. If you prefer to use lemon, I do know a good trick: you can soften the lemon by adding a little evaporated milk. Enjoy, and let me know how it turned out!

    That is one of the many ways prepare Ceviche but it's not traditional recipe.
