in india we use chickpea flour instead of regular flour to make similar snacks! spicing the chickpea flour batter with things like cumin, black pepper, coriander powder gives a really nice taste and it also adds good nutrients!

in Indonesia, we usually make any kind of vege chopped (carrot, cabbage, sweet corn, long bean), mixed it with flour, minced garlic, salt, pepper, msg and deep fried it. It is called "gorengan" . I think you should try deep fried it, sure to be super deli.

When I was a kid we would hang out with these friends of my parents on their farm and they would make faux pineapple out of zucchini for desserts and stuff. I don’t remember all of it but I think the zucchini was shredded in a hand cranked grinder and mixed with pineapple juice and then frozen in a mold that would slice later to make it look like pineapple rings. Maybe there were other ingredients to make it set.

You can save the juice for soup, even freeze it for later. If its a small amount you can just add on top of the old zucchini juices frozen in the freezer. You can do this with all juice giving vegetables.
