Lovely! I found your delightful recipe easy to follow and since you were nice enough to give a "formula" I can now use the "1,2,3" guideline when it comes to baking these, varying the size of the batch. So handy! Years ago I made shortbread cookies using brown sugar instead of white (castor) sugar and the flavor was rich and awesome. And your accent is delightful...don't change it, please. Thank you so so so much for the recipe! These turned out beautiful. I used 120gm AP flour, 30gm corn flour, 100gm butter and 50gm sugar. Baked at 150 for 20 minutes on the lowest rack with only top heat on in my small electric oven. They browned a little more than yours but the crunch was perfect. You're absolutely incredible.

I haven’t made cookies in YEARS! :). I just never figured out how to do it right! Your hummus and pita bread recipes were fantastic so I just tried these cookies w/grated lemon peel...heavenly. I was super nervous when I had to roll them out but it worked great and I appreciate the video. My husband will be thrilled when he gets home and find these added to his tea! :)

These look wonderful, as does everything you make! I use part plain flour and part fine grade semolina powder for mine but I’m going to try it with cornflour and also with the rice flour. Also ground almonds, chopped dates and a little almond essence is quite nice too! Have a lovely day Bincy. 😊

I am so happy to hear you made these shortbreads and they turned out well.They can be kept in an airtight container at room temperature for up to 1 week(without any preservatives). But sorry that ,I don't have a clear idea about preserving it for a long duration.

Just started making them, mixed the flour into the sugar butter mixture, it didn't become flaky but creamy instead. Maybe my kitchen is too warm!? stuck the mixture in the fridge, hopefully it will firm up abit. I'll add a touch more flour.

Sorry that i could not reply you on time.The mixture got creamy because the butter was too soft .As you said, the mixture will firm up when it is cold..you don't need to add extra flour.. Hope your shortbreads turned out well.

Hi Bincy I really want to try this recipe, however I don't have the food scale. Google has different quantities depending on the website. Please indulge me, what are the cup measurements for these ingredients, working on 1 cup is 250ml measurement.

The recipe and demonstration are excellent, the dough mixture should have been chilled for a hour before shaping, it would have been easier to work with.
