🙂 The dough is on its final rise right now in the fridge ! As I am rewatching this video, it looks as though the bread is removed from the glass baking dish during the second half of baking. Is this correct ? Should I take it out and set it directly on the oven rack to finish ? I'm HOPING it turns out !! 😊 🤞🏽
Yes we need to reduce the heat and bake it open during the second half of baking. Hope your bread turns out great!

This will be now be a 'go-to' recipe. I make baguettes on occasion, and I think people will appreciate this round, rustic loaf as well. I actually left it in the Dutch oven at reduced temperature for the remaining time. It turned out wonderfully ... at least it LOOKS really good !! 😉 (It must taste good, also, I HOPE !) Hi, are you using all purpose flour or bread flour?
I have used all purpose flour with 10% protein. We can use either bread flour or plain flour with protein 10% or more 👍

Hi, l do not have a big glass casserole with a cover. How else can I bake the bread? Please advise as l really would like to try baking this yummy bread. Thank you.
To make this kind of breads, we need an oven safe dish with lid. If we don’t have glass vessel, we can use cast iron Dutch oven which is great for making this breads.The lid will help to lock steam inside which will prevent the dough from drying and will help the bread to rise beautifully. Also we can create steam inside the oven by spraying water and also by placing a pan with hot water inside the oven during baking. THIS is THE BEST yeast loaf I've ever made!! So SOFT, but still a rustic loaf. Would do very well in a loaf pan, I'm thinking. But you have to do the long "ferment" to achieve this softness and amazing crumb...delicious! It's a very simple loaf to make....just extra time; but well worth it! Thank you!!

😊 This looks LOVELY. I have a question... Following the 18 hours in the fridge, does the dough need to come to room temperature before the first shaping ? Or do you gently stretch it into a rectangle and fold it as soon as flipping it out of the bowl ?
Thank you Julie. After taking the dough out from the fridge, pre-shape the dough immediately (we don't want the dough to come to room temperature). Hope it is clear. Happy Baking!

Tried these with my students as an end-of-year treat and it was a hit!!!!!!!! They brought the ingredients and worked in small groups. I tested them at home the day before and they were good but a student brought bread flour and I preferred the texture it gave.

For how long and at ehat temperature do you have to heat the baking dish to make the dutch oven?
We need to place the baking dish in the oven while we preheat the oven to desired temperature ; the duration to reach 480 F heat may vary from oven to oven. For me it took 15 minutes to reach that temperature.

I going to try this. Your tutorial is excellent. It's so hot where I live that I have never had much luck with sourdough. I have tried many of your recipes and they never let me down. Of course No1 being your fruit cake. I forget how many times I have made it. Thank you for taking the time to show us.

@@bincychris If it helps, I'm pretty sure that commercially made "sourdough" bread includes some form of acid (citric, ascorbic, vinegar, etc.) to create the sourness. As a result, commercial "sourdough" tastes unnaturally sour compared to bread made with sourdough starter.
