ROTISSERIE CHICKEN NOODLE SOUP RECIPE
1 tablespoon extra virgin olive oil
1 medium onion, chopped
3 carrots, peeled and cut into bite-sized pieces
2 celery ribs, cut into half-moons
3 cloves garlic, chopped
1 teaspoon poultry seasoning,
8 cups chicken bone broth or chicken stock
4 cups shredded rotisserie chicken
3 tablespoons fresh chopped dill
2 cups cooked egg noodles
sea salt and pepper to taste
Cook noodles according to the package and set them aside.
Place a large pot over medium heat and heat olive oil. Add the onion with a fat pinch of salt. Cook for 5 minutes or until the onions are fragrant and translucent.
Add in garlic, carrots, celery, and poultry seasoning and allow to cook for 5-6 minutes or until the vegetables are softened but not browned.
Pour in the chicken stock and season with salt and pepper. Bring everything to a boil and then reduce it down to a simmer.
Add in shredded chicken and continue to simmer for another ten minutes. Adjust seasonings as needed and finish with fresh chopped dill.
You can add the cooked right to the pot before serving or in the bottom of each bowl if you don’t think you will finish all of the soup. If you store the soup with the noodles in it they will get soggy, this is why I prefer to cook them on the side and add them at the end.
NOTES
If you like a bit of heat, you can add some red pepper flakes to the base of the recipe when sautéing the veggies.
If you like lemon, try adding a big squish to the pot right before serving.

    Did you ever try boiling chicken breast for 20 to 25 min along with lots of fresh veggies ? It turns out surprisingly will and the chicken breast will not be dry

    Im 53 and just got home from a shocking emergency appendectomy and was trying to figure out what to make to eat and this popped up. Simple enough for me to make using rotisserie chicken and broth, easy to eat, and super nutritious to aid in a speedy recovery. Plus we got 15 cm of snow with more on the way.     I made chicken noodle soup in my slow cooker in last week. Fewer steps required. Cooked the noodles separately and added them after the soup was cooked. Used freezer safe Mason jars to freeze the soup. Great lunch to have after shoveling all that snow!!

    Just made it! Delicious recipe! Easy-peasy. I cut the recipe in half, used already shredded rotisserie chicken, added some peas. The dill is delish! This will be a go-to recipe for me. You are absolutely adorable and I thoroughly enjoy your video recipes.

    Love your channel. You don’t have any added talking that isn’t necessary. I am mostly whole food plant base but occasionally eat chicken. And, love chicken soup. The dill sounds delicious, I just happen to have some growing in my little hydroponic garden. I would love to see more whole food plant based recipes.     I just wanted to tell you how much I love your channel and how much it is saving my life. I am severely overweight and I have been trying to find a way to incorporate being healthy into my diet. I have no clue on what things to eat or what things are healthy or any kind of recipes that I can use. I actually came across your channel once a long time ago and found a recipe for the three ingredient chocolate chip cookies and my son loved them so much he asked me this week, “can you please find that recipe and make them again, mom?” I had no idea what your channel was called but somehow I found the recipe a few days ago. But then I start to delve deeper into your channel and fell in love with it! I realized how much you and your channel can truly help me on my quest to finally lose weight again. A lot of things I have not tried and kind of make me nervous because these are not foods that are normal to me nor have I tried before but I am open now and I know that once I actually start to eat cleaner and get used to trying these foods that I will start to enjoy them. Watching your videos, you have made it seem better for me to try to lose weight, especially after watching your video about how having a clean and healthy eating lifestyle is not something you have to switch 100% overnight. I think that’s where I have been going wrong all the time; trying to 100% change my diet, exercise an hour every day, drink a gallon of water, etc. within a 24 hour period after deciding to go on a diet plan. Thank God for your channel and for you, for showing people a good and healthy way; with great instructions, recipes, and ideas, to help people change their lives thru eating healthy. I am currently binge watching all of your videos and taking notes and making ingredient list to make your recipes. I have a long way to go, about 114 pounds to lose but for the first time, I actually have hope after seeing your channel and knowing there are recipes that I can make and learn to enjoy. The first recipe I’m going to try tonight, is the Buddha bowl and the second, is the chicken salad recipe! God bless you and thank you so much for your channel! I feel like now that I can do this!

    I usually cook the pasta in the soup,that way it take on all the flavour of the broth.And it's a one pot dish. And Parmesan cheese to finish it off is so delicious.

    Never say never. You just may be surprised! Fresh dill is used in alot of European dishes. My mother, who was from Germany, planted it in her garden and used it often! Try it with this dish, salmon, or other dishes...like lemon dill sour cream sauce for potato pancakes.

    Good tip on the noodles being separate from the soup. I once had a great idea to throw a whole box of orzo into my homemade soup and when it didn't look like much I tossed in a second box. While it tasted good the lack of broth was alarming. Big Boop on my part 😀

    I guess I like mushy noodles because I just throw the noodles in the soup to cook. I also boil all of the chicken carcass and throw that in the soup or the freezer for another time. More richness.

    This is how my mom taught me to make chicken soup, i just use a whole rotisserie chicken from costco. No frills and it ain't fancy but it's easy and fast to make and tastes damn good for what it is. You really can't mess it up either tbh, I just season with salt and pepper to taste

    I can’t eat high carbs like this so I like the idea of keeping the noodles on the side so others in the household can eat the noodles and I can eat the soup by itself or add konjac noodles

    I have a question about the homemade chicken stock. I make chicken noodle soup every Sunday. I sometimes save the broth and put it in the freezer, but my concern is if I defrost the broth, than I heat it up to make this soup can I put the leftovers to the fridge and heat it up again the next day? I’m really bad with freezing food 😬 thank you. Love your recipes and advices ❤️

    I don't see why not! I would just cook the noodles on the side so they don't get mushy.

    Why don't you cook your noodles in the broth and then drain them into a bowl to add into the soup?
