After a firey pumpkin carving contest Justines pumpkin has won in the polls. Now the loser/Ron must choose a historical recipe and cook it on his own while Justine sits back and watches. Naturally the man who hates seafood has chosen a seafood recipe. Ron has found the oldest American recorded recipe for chouder/chowder, posted in the Boston Evening Post Newspaper on September 23, 1751. Justine will be grading Ron on his interpretation and taste of this dish so stick around to see was she says. :)

Heres the recipe incase you'd like to try it :) First lay some Onions to keep the Pork from burning, Because in Chouder there can be no turning; Then lay some Pork in Slices very thin, Thus you in Chouder always must begin. Next lay some Fish cut crossways very nice Then season well with Pepper, Salt, and Spice; Parsley, Sweet-Marjoram, Savory and Thyme; Then Biscuit next which must be soak'd some Time. Thus your Foundation laid, you will be able To raise a Chouder, high as Tower of Babel; For by repeating o're the Same again, You may make Chouder for a thousand Men. Last Bottle of Claret, with Water eno' to smother 'em, You'll have a Mess which some call Omnium gather 'em.

Sounds good to me. Maybe adjust the time to under 20 min if the fish is supposed to be white.

Traditionally, sherry or a port wine is used in seafood chowder.
I think the fish might be over cooked, it doesn't take long to cook fish and I think you said you gave it extra time. This would make the fish tough and rubbery.

I'm currently watching this segment to help me cope with the loss of my father. He passed away two days ago. When I saw the shot of pork belly, it reminded me of Korean barbecue he enjoyed. If there's any good memory I could remember is when he saw me doing a pop surreal charcoal drawing for art assignment. It happened in my 20s during community college years. He was amazed, he finally understood why I love art. May God provide him and mom (she passed away in 2017) comfortable healing, good care, and good support in His Holy hands as they need it more than my siblings and I. Amen.
Manhattan clam chowder has a tomato broth. I’m a New Englander and there’s nothing better than a bowl of creamy Chowdah after a Autumn walk along the rocky coast of Maine.

He did swimmingly, even with people carping at him.
The look on Rons face was priceless with the first bite.
So yes, the pork needs to be very thin like bacon. The fish, needs to be cut crosswise. So you can bite it. You added to much water. Why, because if everything was cut small, you wouldn't need so much water to cover everything. (The super thick pork and fish 😂) Fish that thick loses its texture. So I essence you made it like a rubber boot. 😂 I'm so glad for Justine that you made this. Now you men can see how hard it is too cook. It's not just slapping things together and boiling😂. 😂😂😂 Plus Ron learned something too. Next time you ask Justine, "I'm hungry, or where's some food?". You'll think of this and you'll calm right down. 😂😂😂❤❤❤

Fish Chowder Adapted from the 1751 poem "Directions for Making a Chouder" Prep time: 15 minutes Cook time: 20 minutes Total time: 35 minutes Ingredients ½ white onion, sliced 9 ounces hardtack (see note) 5 slices bacon, halved One pound firm white fish, in 2-inch slices ½ teaspoon salt ½ teaspoon pepper 1 teaspoon dried marjoram 1 teaspoon dried parsley 1 teaspoon dried thyme 2 cups red wine Water Instructions Spread the sliced onion in the bottom of a heavy pot. Sprinkle the sliced fish with salt, pepper, and the dried herbs. Start layering! Lay four slices of the bacon over the onions, then a layer of fish, and finally, some pieces of hardtack. Follow with another layer of bacon, more fish, and hardtack, until you run out of ingredients. Pour the wine over the layers along with enough water to just cover the ingredients, and set the pot on a stove. Cook on medium heat for about 20 minutes. The hardtack will absorb most of the liquid, so keep an eye out for any scorching. Take the pot off the stove, and check to make sure the fish is done. Serve immediately in bowls. Notes and Tips Recipes for old-fashioned hardtack abound online, as do ways to buy it. The amount of liquid your hardtack will absorb may vary, but it should be soft before eating. Good to see Ron in the kitchen! I would have left the wine out. Cut the pork in small strips, leave the fish aside and pan fry it about halfway through the cooking time, then add it in the last 10 mins. Personally, I am allergic to wheat so I would substitute potato for the biscuit. Boil the taters, cut into slices and use as the biscuit.

Fish gets mushy when overcooked. I tuned in at the end but my guess of why the fish turned brown may have been a reaction to the pan it was cooked in or maybe the red wine. Try white if you ever make it again.

Yeah the fish texture was probably like that because it was overcooked….but it looks interesting! I maybe would have cooked the fish separately and put it on top of the broth/stew. Thanks for sharing you guys are amazing and this was fun!

I agree with Justine, if the pork was sliced thin like bacon-thin it would have cooked faster and the fish would not have been severely overcooked. Don't boil it so hard, maybe a good simmer. The fish turned color due to the claret (I'm not a fan of cooking with red wines). Maybe next time substitute beer for the wine. Properly cooked that should be a delicious soup.
I’m with you Justine, I don’t drink any alcohol either. If I could smell it or taste it, I didn’t like it. But I have had a little bit in the past, however, just 1 drink makes me so sick, and not just when I have it, but for days. It just isn’t worth it. Drugs and alcohol from my fathers side is why I stayed away. My mom used to make Cioppino (pronounced chapino, it’s an Italian fish soup) it has white fish, mussels (which I will not eat), crab, calamari, shrimp, and clams. I like crab and shrimp is all. We gotta give Ron an atta boy for cooking and trying something that he doesn’t like. I always enjoy seeing you guys. The expression on Ron’s face was priceless!! But we have to give him credit for trying something that he typically doesn’t like. Maybe the wine colored the fish. I’m surprised the receipt didn’t call for white wine.

Well, fish doesn't need a lot of cooking time, so I think you overcooked the fish. And I think Justine is right about cutting the meat very thin, so the meat and fish have the same cooking time. I would not do this because fish and meat together is strange. But I liked the video a lot. It was fun 😊

This is sorta similar to a traditional dish we eat in southern North Carolina called catfish mull. Onions, potatoes, bacon and catfish chunks layered in a pot. We don't add any liquids. The moisture in the fish is sufficient to cook everything.
This was interesting to see. I couldn't tell at all that Ron didn't like fish when he ate it, haha. When I heard the cat meowing, at first I thought it was meowing as it smelled it and wanted some, then seeing it at the window, I thought, it didn't want any, it wanted away from the smell! My dad used to make something similar to this, but his didn't have wine or fish in it and instead he had Pork and or Lamb with Chicken stock and a few more vegetables. It was quite good. This on the other hand, doesn't look like something I'd want to eat. Partly due to the wine in as I am the same as Justine when it comes to anything alcoholic for similar reasons I never have went near any alcoholic drinks. I like fish sometimes but the fish in that didn't sound good if it had a scaly texture and turned brown like that.
This Punishment Cook segment was GREAT ! Ron you selected a great option. I think the pork should have been very thin. Who knows what happened to the Cod ! Glad the broth was tasteful and the fish added flavor.

I like that the original receipt is written like a poem. I wonder if maybe as Justine suggested cutting the meat and fish smaller and maybe even breading the fish in some flour with salt and pepper would have made the texture better and the broth thicker. It's a unique recipe for sure. I'd try it if someone served it to me. Not sure I'd love it but I'll eat almost anything. lol

I see a lot of good tips in the comments, and took note of Justine's tip to cut the pork thin. Maybe you can try it again, adjusting the cooking temp and time, adding the fish last, and it will taste better. I think Ron did a great job! As for me, a Vermonter, I like fish, oyster or clam chowder cooked with milk, and a sprinkling of oyster crackers on top. Mmmm - Good weather for a chowder. It's been a really cold day up here.
Hello, sorry you didn't like the dish. I have 3 suggestions. About the fish, fish cooks really fast. I would have cut the fish into bite size pieces and put it in the pot the last 4 to 5 minutes of cooking. Justine is right, the ham should be cut thin like bacon. I would have cut the onions into rounds cooking them in a little fat too caramelize before adding the rest of the ingredients. About the wine, alcohol evaporates at 173°F My husband and I love fish so I think we would like this one. Thank you for your time, it was fun. GODs blessings to you.
Where I live, delta arkansas, I would use catfish or crawfish. Cut ham thinner, use more salt & pepper. Add potatoes Ron your expression😅 priceless.

Even the kitty wants to run😂 In 2014 I cooked biscuits like this and broke a molar. My mother made a similar while I was growing up. Some tricks to try Salt pork and sliced real thin, like bacon and break up your biscuit and it will get thick. If you don’t like fish you won’t ever like it Use less water and server over boiled or roasted potato. And cut your fish also thin. Again if you don’t like fish you won’t like this

"A" for effort Ron. The wine has a lot of pigment and the fish disproportionately picked up the pigment from the wine causing the weird color. It might have just been poor quality fish. There are some tough parts of cod. Wine was a common flavoring because people had wine. In general you shouldn't taste the wine. The alcohol cooks off and the wine is to enrich the flavor profile but not be discernable as wine, just flavoring and coloring in the background. I probably would have broken up the ship's bisquits before soaking (to assure they dissolved more evenly) but they seem to have done that anyway. Bottom line: This was a lot of fun!
