Rick Bayless "Mexico: One Plate at a Time" Episode 808: Tijuana Roundtable
There’s a long heritage of good food in Tijuana: It has an amazing taco culture and is the birthplace of the Caesar salad. Today, Tijuana boasts one of the top culinary schools in the country and some of the best chefs in Mexico. Rick and three fellow food-lovers dine at the ultra-modern Mision 19 located in Mexico’s newest Leed Gold Certified building. Chef Javier Plascencia wows them with his creative twists on classic Mexican dishes such as braised beef short ribs wrapped in fresh fig leaves and served with black mole and kabocha foam. For starters, Chef Javier layers local tuna with nopales, chicharron and avocado meringue. Between bites, Rick and his guests discuss their own relationships with food, the expanding culinary scene in Tijuana and the future of Mexican food.

I am a consistent follower of you, Rick. I watch every single video you come out with. It's just a joy to watch. It's very relaxing and I learn so much each episode 😁But as everybody has said, what's up with the audio? Please look into that.!!!

In fairness, they are completely free. He doesn't even advertise a Patreon/Channel Membership and only very occasionally even mentions his own products.

@earthcandleco@@kingtillySure. My point is that we're getting this content for free, so we don't have much of a right to be annoyed when something goes wrong. The original commenter could have expressed his/her displeasure with the audio in a kinder way.

The best part of Tijuana is the people, second to none. The food delicious and affordable. The only problem with going to Baja is that you may not want to come back!
The audio in this video also cut out for me but came back when I skipped ahead a couple of minutes. I then decided to go to Rick's website and compare this video to the same video that Rick has up on Vimeo and the audio was complete for the Vimeo hosted version.

I wonder if these fancy restaurants charge in US dollars, and not cheap, I'm sure. But yeah, San Diego Mexican food has influenced the food in TJ. 20 years ago portions were much smaller and plainer, but the past 8 years or so, tacos and food has gotten a lot bigger and tastier, in general. And probably more cheese than ever before.

Its April 2024 now. Idk how old is this video, but i heard TERRIBLE things about the SAFETY in Tijuana all this past decade. How is it RIGHT NOW? Im amazed that this high end school and restaurant is launched in Tujuana where it seems to be very unfafe! Im in Los Angeles, California and i used to go to Tijuana just to eat for the day! I LOVED going. But then safety got so scary, i stopped going. I cant wait for things to be safe again. How is it now? April 2024.

Grew up in Los Angeles and been to Tijuana many times. This is NOT the real TJ. This is the Tijuana for the rich and famous and that's about it. You can see peoples homes of thin metal sheets and wood sticks from the San Diego side of the the boarder. Tijuana is a VERY VERY poor city that survives off sailors and some brave tourists from the US. BE CAREFUL going to TJ as an American. Show people the real side of Tijuana please. This is showing only a SMALL and VERY wealthy part of TJ.

Very good point! I'd like to watch a recent documentary on TJ, to see how it is now. I don't go there hardly ever, but if we do, it's mostly to the Rio area. The border crossing has given us some huge headaches each time we have to go. Something I remember was that there are a few french bakeries around TJ, with some really delicious desserts - not cheap though. We have a friend who speaks Arabic, and he was talking to a worker in one french bakery that spoke Arabic.
