Rick Bayless Hacks: "Umami Bomb" Popcorn w/ Dried Shrimp

💣 🍿 Movie night will never be the same 🍿 💣
Recipe 👉 You can buy dried shrimp powder in Mexican grocery stores (making the whole process much faster), but it will lack the richness that toasting adds. Some of you might like chopped cilantro sprinkled over the popcorn.
• 1 loosely packed cup (1 ounce) dried shrimp with shells
• 3 to 4 tablespoons butter, melted
• 1/2 teaspoon or more chipotle powder (fine or coarse is perfect here, chipotle flakes also work)
• 1 teaspoon Worcestershire
• 1 teaspoon salt
• 1 teaspoon sugar
• 8 cups fresh-popped popcorn (the amount you’ll get from popping ½ cup kernels in 3 tablespoons oil)
• A big handful of Mexican añejo/Cotija-style cheese (or Romano or Parmesan)
Heat oven to 400 degrees. Spread dried shrimp on baking sheet and toast until lightly browned and nearly crisp, about 12 minutes-they will finish crisping as they cool. In small electric spice mill/coffee grinder, pulverize the shrimp. Mix the melted butter with the chipotle powder and Worcestershire. Sprinkle over the popcorn and toss to coat evenly. Sprinkle with the salt, sugar, cheese and 2 teaspoons of the shrimp powder and toss again.

    I had absolutely no idea that Mexican cuisine used dried shrimp until he mentioned it in the video yesterday. For anyone who doesn’t have a Mexican grocer in their area, a lot of Asian grocers carry dried shrimp too!

    I knew about that because I had picked some of the dried shrimp powder a few years back at my local International foods market. They also have the baby shrimp but not the large dried shrimps. Didn't bother with the baby shrimps as I didn't know what to do with them other than add to some ramen dishes (which is where I used the dried shrimp powder.)

    They do have a slightly different flavor. I don't know if they are dried differently. I always keep both... also Nigerian and Korean styles because they taste different to me too. I love dried shrimp haha.

    also my mom use to make enchiladas with dried shrimp,, chile de camaron enchiladas with queso cotija and onion on the top!! very good for hangover!✌🏼🙏🏻😋😋

    Thank you for this series showcasing diverse products from the Mexican kitchen. As a kid I would eat those dried shrimp with lemon and hot sauce as a snack. 🤣 As an adult I use them to make the shrimp cakes (tortitas de camarón), to add flavor to shrimp soup (caldo de camarón) or for the seafood soup (caldo de siete mares). My favorites are the shrimp cakes- maybe you can do a video on how to make them? Yum! 🤤

    The dried shrimp “eggy” patties he mentions early in the video are for a central Mexican dish called _romeritos_ which is a dish made with those patties, seepweed, nopales (edible cactus), tiny potatoes, and poblano mole. This is a Christmas dish that’s usually paired alongside _bacalao_ , a European inspired salted cod dish.

    Mexicans are flavor geniuses. The Chinese also use dried seafood. The smell and taste of dried shrimp are totally different.

    Dried shrimp and shrimp powder are quite common in Louisiana grocery stores even in gas stations. Louisiana is still America aren’t we. Growing up here I find realize just how regional dried shrimp was till I was an adult.

    I wonder if this shrimp powder would sub for the African crayfish powder used in dishes? It would be a lot easier to get. I will look for these the next time I am at the market. Always nice to have a new ingredient to play with.

    I've used it as a sub before for Nigerian food. They do taste different though when eaten alone but I couldn't tell the difference in the meal I made.

    This is an interesting recipe that I have to try out. I wouldn't have thought of it if you hadn't presented it to us. TVM for the effort! However, I'm confused about the different flavors between the different shrimp. Is the bigger shrimp a little sweeter like fresh shrimp can be? Is that why you think it has a better flavor?

    Rick: in Singapore (the other side of the world), there's something called Hae Bi Hiam - it's used as a condiment. Dried shrimps are a key ingredient, together with peppers, shallots, garlic and other spices. kzread.info/dash/bejne/lpeuxtWBorWqdcY.html It's a dynamite companion with coconut rice, stir fried noodles of all kinds, fried rice and steamed vegetables. In Hong Kong, they use a similar recipe to produce the XO sauce, where they add dried scallops for additional punch.

    Most grocery store “cinnamon” is really powdered cassia bark, a cinnamon relative with a very punchy flavor. Mexican cinnamon ("canela") is usually sold only in stick form. The sticks are made up of many thin layers of cinnamon bark that are soft enough to crumble into a spice grinder or into a mortar to grind. Mexican cinnamon has a more delicate, wonderfully flowery aroma. Seek it out.

    I seen dried shrimp in stores. I often wondered how is that used in cooking. A fish chichiron? A flavor an enhancer, maybe something to look into. If I did consume popcorn, it would need to be GMO Free! 🖖🌮

    IMHO, sugar is out of place here. I wonder if anyone agrees. Maybe I’m alone in this, but I find that sugar obscures the umami flavor. I find it annoying when sugar is added to an otherwise savory taste.
