Easy Homemade Sambal Chilli w/ Dried Shrimp Recipe 自制叁巴辣椒 For Sambal Fish/ Sotong/ Fishball Noodles

You gotta try this Sambal Chilli recipe. This is really very good. Roland and I love to eat at this stall along Braddell Road in Singapore that serves up really really good Sambal Stingray and Sambal Sotong. Unlike some stalls in Singapore, this stall is very generous with their sambal chilli so that every bite of the fish or sotong always have sambal chilli. You can even request more sambal chilli from them and they won't even show you a black face or reject you. Nice people! Roland has created this sambal chilli and sambal sotong recipe using their chilli as reference. I would say his recipe is pretty spot on and if you're a lover of sambal chilli dishes, you really gotta make a batch of the chilli at home so that you can just eat it with rice or use it to cook other dishes.

200g of shallots
30g of garlic
20g of ginger
1/4 cup of cooking oil
25g of dried chilli - hydrated & deseeded
150g of fresh red chilli - deseeded
4 stalks of lemongrass (use only white part)
50g of dried toasted belacan
1 cup of dried shrimp soaking liquid
0.5 cup of cooking oil
2 teaspoons of sugar

    I still remember last year I couldn't go home because of the lockdown. So I cooked this sambal and wrapped it in aluminum foil packaging, vacuum and seal it. within 1 week my mother received it. She really enjoyed this sambal. And again today, I opened YT ur channel, getting ready to remake this sambal and getting ready to pack it up again for this coming CNY. It's so sad that I still cannot go back to my hometown. I hope next year I can come back and cook this sambal together with my mom. Thanks for ur recipe.

    Hihi. The purpose of candlenuts is mainly to thicken the rempah. You can omit them since you’re not going to make curry with this sambal chilli. Happy cooking

    Hi Grace. We’ve not made our sambal spicy. It’s pretty easy to take. Just make sure that you remove all the seeds from the chilli used because that’s what will give you the heat in chilli. Happy cooking

    Hi Mel, no problem. you can freeze the excess cooked sambal. If you freeze it, you can keep for months. If you store it in the non-freezer compartment, I think this will last for about a week.     Hihi Jiating. Basically is water that you used to soak the dried shrimp in. 1 cup is 250ml. Hope this helps.

    DO we have to wash the dry shrimps when we buy them from the shop in packets or just straight away blend them or cook them?

    Hihi. Yes please give them a rinse and then soak them until soft before using them. The liquid that you used to soak the dried shrimp can be used too but not the water that you rinsed the shrimp with.

    Hi Tinny. Thank you so much too. You can keep this in the fridge for 2 weeks with no problem. If you wanna keep it longer, you can freeze it too. Happy cooking
