Today I am going to show you how to make dried scallop, dried shrimp and dried mushroom at home. These are widely used chinese ingredients and they can be difficult find in some countries. If you look up online, the price can scare you away. Especially for the dried scallop, it could be 100 dollars a lb. But it is very easy to make it at home and it will be way better quality plus I will also talk about tons recipes that you can use with these dried ingredients. So let’s get started.
Dried Shrimp (干虾米、金钩海米)
- Season 1 pound of shrimp meat with 1 tsp of salt and 1/2 tsp of sugar. Let them sit in the fridge for 1 hour.
- Use a non-stick pan to cook the shrimps on low heat for 8 minutes or until all the shrimps turned into an orange color.
- Set the dehydrator temperature at 135 F. Dehydrate the shrimp for 8 - 12 hours depends on the size.
- Tip: If you are using frozen shrimps from a package, you must read the label. If you see that the salt is on the ingredient list, you will have to add less salt.
- Store the dried shrimps in a sealed container and put them in the freezer. It will stay good for a year.
With this dried shrimp, you can make the following recipes:

- Use a non-stick pan to cook the scallops on low heat for 5-6 minutes or until all the scallops are changed color.
- Set the dehydrator temperature at 135 F. Dehydrate the scallops for 8 - 12 hours depends on the size.
- Tip: If you are using frozen scallops from a package, you must read the label. If you see that the salt is on the ingredient list, you will have to add less salt.

Dried Shiitake Mushroom (干香菇、干冬菇)
- Seafood contains amino acid so you need to add some salt to create the reaction so you can get some MSG out of it. Mushrooms already contains MSG so you don’t need to season it. You don’t need to pre-cook it either. You just directly put the mushroom on the rack and dehydrate them. No matter if you use high temp or low temp. The taste will come out the same.
- Shiitake is the most popular type for making dried mushrooms. Yes, you can use other kinds but the smell and the taste are going to be different.
- Store the dried mushroom in a sealed container. It will stay good at room temperature for a year.
With this dried shiitake mushroom, you can make the following recipes:

@@linkinsam1796 Yeah, I remember she did a Vegan Oyster sauce recipe. But, I could of swore she showed in one of her videos how to prepare Oysters to be used in sauces/broths? I had no idea that is how real oyster sauce is made - this video was SO interesting like all your other videos and YES authentic Chinese oyster sauce recipe please!!
And many thanks for showing how to remove the shrimp vein with the bamboo stick. After years of peeling shrimp then splitting the back open and pulling out the vein it is a welcome revelation!
Please do a recipe for oyster sauce please. Also if you could do a recipe for black pepper chicken. Thanks Mandi
This is the greatest channel ever. Always thumbs up. Wonderful content.
At 60 year of age, I have finally leant how to remove vein from shrimp! Thank you. Liked it and subscribed, as well. Buying your wok now! :)
Very informative, but I was too busy eyeing your cool food dehydrator the whole time. LOL!
Yayy!! And I am interested in that oyster sauce.
Thanks for great ways to dehydrate valuable ingredients needed for my Chinese cooking. Saves me much time and cost going to the Chinese market.

Maryann Larsen if you vac seal it, throw in a moisture absorber and keep it in a cool/dark place you could potentially store it for years. Always smell anything stored for a long time before using to see if it has gone rancid!

Yes, I would love to watch you make homemade oyster sauce. You have the most informative channel of the many I have seen. Thank you.
Excellent video. Thank you and thank you so much for being so thorough by going into the differences between blanching and stir fry and temperature. Plus recipes! :)
What I most like about your videos, is the MAD amount of techniques that you learn us. I love it.
Really opened my eyes about oyster sauces I’ve been buying over the years. Would love a recipe for that. Also I miss Publix SO much and your packages reminded me of it! I used to live for a short time in Orlando and they were everywhere.
Thank you so much for your videos! I watch them over and over. So much information and detailed . I’m one of those people that needs reasons for why things are done a certain way. Love your videos.
Thank you for sharing this episode with me and your other fans. It's very important knowledge. I love your show.
This was fascinating! Dehydrating things is fairly simple, but never something I think of doing myself. Thanks for sharing!
This is so eye opening. Never knew how oyster sauce is made and never did any research on it. Thanks for this video
Outstanding vid. Thank you so much for passing this along. I stopped making several dishes including XO sauce because of the cost. You're a real life saver.
I think this might be the best technical Chinese cooking channel on KZread. Thank you so much for producing these absolutely fantastic videos!
Your instructions, to the point , very informative I personally appreciate you 💗
I just ordered a dehydrator!! So excited to see recipes that I can try ..Thank you so much for sharing this information..
Mandy I bought these savory things from China town over the years. Learned a lot from your video. I tried to make dried scallops before but it didn’t taste quite as good as the ones I’ve bought at China town. I only salted the scallops no sugar and blanched them before putting them in the dehydrator. The scallops were good but didn’t have the flavor as the ones I bought. I must try your method. As far as shrimp I didn’t attempt to dry them. The last part of your video on the white things that are on the scallops was very valuable because I’d just discovered that on the last package that I had bought a while ago that was in the freezer. Debated on throwing them away but now I know their still good. Thank you for the great content on your channel and please make a video on making oyster sauce.
I watch your video over and over, so much tips+info+sciences. You are great
Wow!! This is one of the best tutorial I've seen. Thank you.
Mandy I am so glad I am a patreon supporter. I just love your work. I'm a huge fan of authentic Chinese cooking and used to live in San Francisco with easy and free access to all of these ingredients. I used to love to snack on dried scallops on my way home. They are actually great. I haven't had access to dried scallops and as you said they are extremely expensive online. This tutorial is just what I needed. I don't think there is anything else out there like this video. I thank you so very much for a well-produced video and an explanation as to why to use the sugar and salt and the correct temperature. Thanks again and hope you are well.
Yes, please. I would love to see how you make your oyster sauce! Thank you. Your videos are wonderful!
The dried shrimp will be fun to make with my kids. Since they're limited in fun activities away from home because of covid, I always appreciate finding something new to do with them. Thanks, Mandy!
I've made so many of your recipes. Although I would never take the time to make *authentic oyster sauce* -- as I have "good" version at home -- it seems others would be interested to watch. As always, your thoroughness is commendable, and your suggestions are thoughtful. Thanks!
Thank you sooo much for making this video! Love it - so informative and easy to follow. I will definitely give it a try 🙏
I absolutely LOVE dried shrimp and scallops! My mom uses them in traditional Chinese cooking and they always make things more delicious! (Still remember how dried shrimp is a MUST HAVE in turnip cake, one of my favorite asian dish. Yum!)
wow. I cannot wait to make these! Thank you so much for the info!
I wish you could come to my house and cook for me. Great video. I like how you give us non-Chinese speaking viewers the name of the items in Chinese. Keep up the good work.

The way you showed how oysters sauce made from cooking scallops. Very intrigued just like my mama did all the time. Vietnamese people have a similar technique like that too. Thanks Mandy.
Thanks for another excellent video that makes me hungry, and I would definitely watch the oyster sauce video.
This one was really cool. I would love to try this some time. Those dry shrimp as a snack would be like crack to me!

Wow this is a money saver. Thanks for this. Dried scallops where I am from may as well be gold!
I would certainly watch your video about the oyster sauce. I started cooking to help in my recovery after being attacked from behind and really appreciate you making these video :) thank you
Great video! Your knowledge is extraordinary! And yes, do the oyster sauce video, please. I don't own a dehydrator but I have forced-air heating and live in a northern, cold climate. I use the late fall and winter months to dry my food. I set up racks over the heat vents and dry my food all winter using the heated air from the furnace. It doesn't cost me a dime because the heat has to run anyway. As an example, mushrooms will dry in about 24 hours. And the heat isn't hot enough to cook anything, but enough to dry quickly without spoilage. Have never dried fish or other seafood but will give this a try this winter. Thanks!
Very informative. Thank you for sharing it with us
Thank you that was amazing and very well presented
Thank you for sharing. I can't believe that it looks so easy. I will try to make them 😄😋

Bless you. I am planning on making my own XO sauce and was going to use soy sauce to dry the scallops. I am glad I found this before I did. Looking forward to making my own dried shrimp and scallops. You have a new subscriber ;)
I didn't know how oyster sauce was made, that's amazing (and expensive). I also really appreciated seeing the other batches of the seafood I feel I learned more than just how to do it.
The shrimps look so beautiful and colourful. Nice one
Thank you so much for sharing your knowledge. I doubt that I would do this, but it explains a lot, if anyone asked me why this or why that as I just love to eat this, so I'm giving all that I love to eat a go! 😊
Great video Mandi! Thank you♥

Yes! Yes! Yes! I would love your Oyster Sauce recipe! These are what I call "Nuts and Bolts" recipes. Completely from scratch, made with good ingredients. I had no idea MSG was naturally occurring in these foods. I have eaten these foods with no problem. At other times, (several decades ago), I had severe reactions at restaurants to the point of temporary asthmatic symptoms and losing my peripheral vision. This was in the 80's, so chances are there may have been extra msg added to the recipe. I am excited to know these recipes and really appreciate how you've explained things. Thank you for your postings. You deserve the status and money that you've worked so hard for. Blessings and health to you and yours and to all who read this and watch your videos! 👍😘😇💖

wow you are now at 600k+ keep up the good work.
Yes please oyster sauce recipe. I use only Lee Kum Kee oyster sauce, which is delicious, but nothing like oyster sauce I had in China. It was thinner and had the BEST oyster umami taste! I wish I could buy it in America, and my Chinese grocer agrees! PS - I use my wok daily now for over a year. I love this wok!! Thank you for making these available!
Hi. Thank you for the very useful content. I live in Thailand. I have some tip used here to save time in de-shelling the fresh shrimp. You might cut the heads and save them for stock making later but leave the body shell intact. After dehydrating, put the whole bunch of the dried shrimps in straining cloth and wrap it tightly. Hit the wrapped cloth on a hard surface for a minute. All those shells will be separated from the shrimps. To keep the flavor which is diluted by boiling you may also steam the salted fresh shrimp as alternative to frying in the pan.
I’m totally doing this for long term shrimp storage. 🎉
Do make oyster sauce Thank you.
