Rice Cooker Sponge Cake Recipe

🙆🏻‍♀️ Please turn on subtitle
🍰 Ingredient:
- 4 eggs
- 70g sugar (5 tbsp)
- 4 tsp lemon juice (~half a lemon) *optional
- 1 tsp salt
- 60g all purpose flour (1/2 cup)
- 40g cornstarch (5 tbsp)
- 15ml oil (1 tbsp)
- 30 ml milk (2 tbsp)
- 1 tsp vanilla extract *optional
📝 Note:
- The cook time depends on the rice cooker you have at home. For mine, I have to press COOK twice until it's cooked.
- Don't over mix the wet and dry ingredient when combining. It will make the cake become dense and chewy. Just mix till don't see anymore white powder.
🌿 Zero waste tip this week:
- I don't know how many of you would care about a single-use toothpick when it comes to check cake doneness. I know it's not plastic and it's small. But it's still made from trees and we tend to throw it away once used. How about make more use of the toothpick or find something around the house as a substitute? In this video I use my bamboo straw cleaner.

    Thank you for sharing this great recipe! I’ve tried it and it tastes soft and quite spongey which is how we like our sponge cakes. The only thing I think I may need to add more next time is a little more vanilla flavouring. Would you also happen to know if this same cake recipe can be steamed instead of cooked in a rice cooker? Would that make it even more light and spongey? Like a pandan kind or cake?

    The best way to replace cornstarch is tapioca flour. But if you don't have tapioca flour either then you can try replace cornstarch with double the amount of flour. Hope it work!

    I’m currently trying to bake it and I think I don’t have the right rice cooker :( my rice cooker goes on « warm » mode every 10min and I can’t put it back on « cook ». I have to unplug it, let it rest a few minutes and then plug it back in to put it on « cook ». I think my rice cooker goes on warm when the rice container becomes too hot and can’t go back on cook mode if it’s too hot. I did this process 3 times and finally gave up, I put it in the oven and will report on how it turns out but it looks good so far! Edit: just out of the oven (I put it for 20min covered with foil), it plumped up and forms a nice dome, it’s bright yellow and super soft and smooth, going to wait for it to cool down and I’ll try it tomorrow but it looks super good 👌

    Mines bottom was burnt. I added a bit of baking soda but it was a big fail. I think i wasn't right with my measurements. My cake was spongey but it was rough. Idk if its the cornstarch?

    Works great if you pay attention to instructions. kzread.infoUgkxviiltW7NlHbp_VL_bLbIkbLAvILVhnia For those that complain about "mushy" or "wet" rice I suspect they are using the included cup to measure rice (which is really only 3/4 cup) and then putting in water using a separate measuring cup that is a full cup. This results in too much water and you will get mushy or wet rice and think it is not done. Just use the included cup for both rice and water, or your own measuring cup for rice and water according to your package directions. It will come out fine. I've used mine for years for brown and white rice. If your machine is bubbling white froth out of the steam vent then it means you should have rinsed your brand of rice first to remove some of the starch. Sheesh. Makes me wonder how people can cook well enough to feed themselves.

    Just tried it, sadly it didn't work, my rice cooker heat too quickly and so the bottom did cook but not the 2/3 on top :( and then it's too hot so I can't turn it to cook again

    Dungeon Master there’s baking powder and salt in self raising flour which will make the cake rise. Yes you can use it, just don’t add the additional salt.

    I'm baking mine as we speak and turned to warm only after 2 mins and it's nowhere near as good as this video! I'm on my 6th pressing to cook from warm and it's still wet. So let's see what will happen!

    Peggy Liu Rice flour shouldn’t be used in anything you want to rise, so I would give a No. For the rice cooker, I’m not sure how to cook with it properly but my suggestion is to operate it like how you cook rice. Good luck 🍀

    anita abigail Yes you can try. But I don’t think the cake would rise that high that you have to cut the recipe in half. As you can see in the video there’s still a lot of space in my rice cooker after the cake cooked . That’s my thought, anyway, good luck 🍀

    While baking powder makes the perfect air pockets to give your cake rise, some recipes don’t really need it. Sometimes, they just need nicely whipped egg whites (like this recipe). However, you can still add baking powder if you want.
