Rice Cooker "Cheesecake"

Rice Cooker Cheesecake
I’m not a good baker and will probably never be a good one. Baking requires exact measurements and I’m more of a taste as you go, a pinch here, a dash here kind of cook.
This recipe is easy, no fuss and almost error-proof. This is definitely not a gourmet cheesecake and I’m sure this is breaking all the cheesecake rules, but it is still good. Plus, it’s fun to see what else can be made in the rice cooker.
Ingredients:
200 grams of softened cream cheese
2 eggs
80 grams of sugar
2 tbsp of lemon juice
200 ml of whole milk or heavy cream
40 grams of cake flour
Directions:
1. In a large mixing bowl, combine cream cheese, eggs, sugar and lemon juice until everything is well incorporated.
2. Add the milk and flour a little bit at a time. Mix well and try to break apart the larger lumps.
3. For a smooth texture, sieve the cheesecake batter. Scrape the bottom of the sieve to push any lumps through.
4. Pour the batter into the rice cooker bowl. Cook the cheesecake for one white rice cycle.
5. Test the cheesecake for doneness by sticking a toothpick through the center. If it comes out clean, it’s done. If it doesn’t come out clean, keep the rice cooker on warm setting until the toothpick test comes out clean.
6. Remove the rice cooker bowl and set aside to cool to room temperature.
7. Once the cheesecake has set at room temperature, place a piece of parchment paper on top of the cheesecake and chill the refrigerator to firm up.
8. To remove from rice cooker bowl, using a small plate or your hand as a guide and carefully flip the cheesecake over and out.
9. Slice up and serve with your favorite toppings like chocolate sauce or fresh fruit or both.
Note:
You can substitute cake flour with pancake mix.
I use a 3 cup rice cooker, every rice cooker is different so make sure to check for doneness once the first cooking cycle is complete. Cooking time may be shorter for a 5 cup rice cooker.
This cheesecake freezes well, just wrap in plastic wrap, place in freezer bag, and you’re good to go.

    Protipp: If you start the mixture with the flour and add the milk in batches at the end, you keep the mixture nice and stiff and can easily stir out any lumps.

    +Vân Nhi Once it has chilled, it should pull back from the sides of the rice cooker. If not, I would let the rice cooker pot sit in some hot water for 2-3 minutes. That should help loosen things up a bit.

    What's cake flour? Is it the same as all purpose flour?

    natsumekyou no cake flour has less gluten so when you mix it the cheesecske wont turn out as tough and firm as it would with all purpose flour... basically all cake flour is all purpose flour mix of corn starch, hope this helps xx

    @@makefoodeatfood Actually most flour is factory sieved. To avoid lumps, mix in a different order, so you get a thick dough first.

    Why not blend the milk and the flour, before adding the cheese and other ingredients. This will avoid clumping the flour and stop the use of a strainer to remove the clumped flour.

    That was my thought exactly. First make a thick dough with flour and some milk, then add cheese and eggs, then the rest of the milk and the other ingredients. No lumps.

    The lumps are from the cream cheese you can see them before the flour is put in. He needed to blend it better is all.

    +Deborah Waldorf I've read that adding lemon juice helps thicken the cheesecake, but I've made this without lemon juice before and it still works. If you don't have cake flour, you can replace with all-purpose flour and cornstarch. For this recipe, you would sift 1/2 cup of all-purpose flour, take away 1 tbsp of that all-purpose flour and add 1 tbsp of cornstarch.

    Pour about a tablespoon of oil in your rice cooker bowl and spread it out with a paper towel around the bowl. You can also use butter and wipe it around the bowl :)

    Just tried your recipe. It was great. So light in texture and taste. I believe I can add 50g more cream cheese to make it a little more dense? Also, just wondering if I can add anything to the cheesecake to spice things up a little. :)

    Yes, definitely try with more cream cheese if you want something a bit denser. You can also add crushed Oreos to batter or fruit jams, like raspberry or strawberry.

    no it will only have a hint of sourness (really delicious) and the milk will not break bc you slow cooked it and there's not that much lemon and there are ingredients to bind it all together ( flour, ...)

    Charmaine Lin I haven't tried it with wholemeal plain flour, but I think it should work. I would use approximately 30 grams of wholemeal plain flour as it's denser than cake flour.

    lacqueredhearts Right out of the fridge, this cheesecake has a bit of a custard-like texture. After it's come to room temperature, it's rich and creamy, perfect for bite-sized pieces.
