I actually prefer maple syrup over sugar! Or smoked maple syrup...for a smokey fish flavor. Or just use Saikyo miso without needing to add any sugar.

@@theyasmineloren definitely is better to make a new marinade that hasn’t been sitting in fish overnight, if you are in a rush I’d understand why you would want to re use the marinade but why not make another one? Boiling it is not the same thing

Tons of conflicting info out there. Some japanese chefs reuse it for 2-3 times. Others recommend throwing it away after just once. Some boil it first before using it as marinade again. Some boil it into a sauce instead. I've no idea who's objectively right, lol.

The audio is indeed softer when she's standing further back...but it's definitely not to the point of "horrible". So I think you are just a typical negative person on the internet that likes to focus on and massively exaggerate all minor imperfections. Probably a slightly negative person in real life as well, lol.
