The likelihood of me ever rendering beef fat is slim to none. Yet I watched from start to finish and never lost interest in this video. Meg just has an awesome way of explaining things. Great to see her have an entire video to herself tonight. Except of course Ben's brief cameo of Ben being Ben lol!

Actually she makes it way to complicated and messy by not using a large mixing bowl to chill the tallow....comes completely out of the mixing bowl as a solid piece when chilled....

Meg, you should save your beef gelation to add to the bone broth you make. Or, you can freeze dry it to make your own beef bouillon for gravies & soups.

As a kid growing up in the UK in the 1950s the jelly was either used in stews or as a stock, it was also a staple spread on bread and a sprinkling of salt. nothing like bread and beef dripping 😊. Love the video's.

Pro tip on tallow. 1 Tbls salt, 4 cup water, grind tallow, mix in roaster, low heat to avoid scorching, strain into large stainless bowl, rest in cool location. Here's the best part, place a cutting board over bowl, flip over onto cutting board, place bowl and board in the sink, run warm water over the bowl..when the water splooshs out onto board, rinse the Puck of tallow with cold wster...reheat repeat

Hi Meg, Barry from the UK here, your Tallow, Fat or Lard, however you want to call it, in the UK we would call it Beef Dripping or Pure Beef Dripping, we also have Fat and Lard but this could be made from vegetables, or a mixture of other animal fats, the reason I am telling you this is because before My Wife (Florence (Flo) and I retired we owned and ran a Fish & Chip shop , Yep the good old British Chippy, the secret of good Fish & Chips as any good fryer will tell you is to only use Beef dripping, its very expensive but its the best frying medium without doubt, Oil might be cheaper and last longer, but the finished taste is nothing, compared to the taste of Beef Dripping fried Fish & chips, Happy New Year by the way to you all, we just love Buggy by the way she's so funny and happy.

Excellent video, very educational. Growing up we never did beef but did hogs. Mama had a huge iron kettle and lard was rendered outdoors over a fire. Slaughtering was always on Thanksgiving day and was the same for all the families in our area that slaughtered hogs. Not sure why, perhaps folks who worked on public jobs were off those days and could help and the weather was starting to get cold enough to avoid spoilage. My mother will be 100 in March and made biscuits as long ss her health permitted. In the last 20 or so years she'd say "I don't know why my biscuits don't taste as good as they did on the farm"? I told her well mama on the farm you had fresh lard, fresh cow's milk and homegrown wheat to make those biscuits, I think that probably makes a difference! Love you guys!

Actually, I'd planned on using it for suet blocks for the birds, but after reading about using it in cooking, I'm using it in the way. My grandpa used a product called 'Teat Balm' that was made of tallow, for his dry hands. It came in square green tins and was originally used on milk cow teats to prevent mastitis and keep them from getting dry after cleaning them. He said before that he liked Sheep Dip, made of sheep tallow, but that product became extinct. It was good for keeping leather supple and clean as well. He worked in the butcher department of a small store.

I believe it is called bag balm(it might be easier to find under that name if you are looking for it). We have a tin in the medicine cabinet.

Thank you for this AMAZING video!! Can't wait for the follow up on what you make with it all. I have been dabbling in make lotion bars, salves and face moisture with my tallow.

I do this method as well. But for the fat I put in 1/2 gallon jar with a couple cups of water. Put the lid on tight & turn upside down, once cool enough I put in the fridge & let the fat solidify. Take it out, turn it right side up & you can just pour the water out. You can usually tell how clean your tallow is once you dump the water out if the first layer of fat still has nasty stuff on it then it needs cleaning again, if it’s clean then you’re good. Usually it’s always at least a minimum of 2 cleans.

Hey, in Turkiye, after straining they put tallow in a pot filled with water at the bottom, that way, those impurities go into the water and tallow sits on top. You get zero brown bits.
