Recipe for Fantastic Focaccia in 4 hours

This is one of the fastest and tastiest focaccia recipes you will find. It is not necessary to wait for the dough to rise overnight to make great focaccia, it can be done in the same day. Just follow the techniques in this recipe and you will get a crispy, fluffy, and delicious focaccia.
Ingredients:
2 cups of warm water
1 teaspoon of honey or sugar
1 packet of dry instant yeast
4 cups of bread flour
2 teaspoons of salt
1/3 cup of good olive oil
Step 1: mix together water, honey, and yeast, and let it sit until it starts to foam.
Step 2: measure out the flour in a large bowl, and start to mix in half of the water
Step 3: pour in almost all of the water but reserve a few tablespoons. Continue to mix and the dough should start to become stretchy, sticky, and fluffy. Add the rest of the water if the dough is still slightly dry
Step 4: add 2 tablespoons of the olive oil and the 2 teaspoons of salt to the dough, and mix it until almost all of the oil is incorporated
Step 5: cover the dough with a damp kitchen towel, or plastic wrap, and let it rest for 30 minutes
Step 6: fold the dough from the edges of the bowl to the center about 8-10 times, or until comes together as a ball again. Cover with the towel and let it rest for 1 hour
Step 7: with greased hands fold the dough over again for about a minute this time. Add 3 tablespoons of olive to large baking dish/tray, place the dough in the tray and flip it over so it is coated in the oil. Cover with the towel, and let it rest for 1 hour
Step 8: heat your oven to 500°F on normal baking mode
Step 9: remove the towel and grease your hands again. Gently dimple the dough with your fingertips until it completely fills the tray, then drizzle more olive oil on top
Step 10: place in the oven on the bottom rack for about 18-20 minutes. Once cooked place on a cooling rack before slicing and enjoying!
