蒸鱼材料:
斗鲳鱼 大约500克
姜片适量
蒸鱼豉油材料:
姜片 少许
蒜头 2 粒
青葱 适量
香菜根部 适量
调味:
冰糖 25克
生抽 2 汤匙
盐 1/2 茶匙
其他材料 :
青葱丝 适量
香菜 适量
香油 2 汤匙

Ingredients (Diana)
1. Pomfret ~500g (two cuts at the back)
2. Ginger a few slices
3. Spring onion appropriate amount cut julienne (soak in water)
4. Red chilli half piece remove seeds and cut julienne (soak in water)
5. Coriander appropriate amount
6. Fragrant oil 2tbsp
Sauces
1. Ginger a few slices
2. Garlic 2 cloves
3. Green spring onion appropriate amount
4. Coriander stalk appropriate amount
5. 200g water
Seasoning
1. Rock sugar 25g
2. Light soya sauce 2 tbsp
3. Salt 1/2tsp
Method
1. Place a few slices of ginger on the steaming plate, then place the fish on it. Place a few slices in the fish’s back and stomach.
2. Drain the julienne spring onion and red chilli.
3. Place all the sauce ingredients in the sauce pan and let it boil. Turn to low heat and simmer for 5min. Drain and discard the ingredients. Put back the water in the sauce pan and add in the seasoning and simmer under low heat till rock sugar has dissolved.
4. Steam the fish under high heat for 8min. Discard the liquid and add in the sauce (step 3). Arrange the spring onion and red chilli (step 2) on top of the fish.
5. Heat the fragrant oil till steaming hot and drizzle on the spring onion and red chilli.
6. Serve and enjoy! 💕
