    WOW. CHOCOLATE in its natural stage, this chocolate is worth gold. Who can say they have had fresh chocolate. CHOCOLATE, CORN, POINSETTA, VANILLA BEAN, SOME OF MEXICO TREASURES TO THE WORLD, AND MANY MORE TO COUNT.

    From the Nahuatl (Aztec language): Xocol: Bitter Atl: Water Xocolatl (Chocolate in spanish): Bitter water. Then Spanish people add sugar and chocolate become sweet.

    Álvaro Hidalgo The native people used to add aguamiel which is the agave nectar. They used to take chocolate drink during the wars and during the long journeys, because they knew the energetic properties of the chocolate. Some writings even say that some natives added chili to the chocolate drink.

    Thank you for sharing this with us! I felt something primal watching this. I’m native Mexican but didn’t grow up there and a lot of traditions or even history never translated into my life. But watching this made me feel desperately sad

    these days in the western world they "Dutch" the cacoa, or something, which makes it less bitter, but probably also affects the taste in other ways. I always wondered what natural cacoa tastes like.

    having a curved Metate with a roll seems preferrable. Seems like it was rarely done like that in europe considering most tools for grinding worked either by even surface or mold, or more elaborated; but even worse by two horizontal wheels. At least until the more industrial use of vertical wheels. people often got abrasions on their teeth because of pieces of ground stone ending up in their food. This use seems to reduce tool-to-surface friction and should lead to less stone ending up in the food, for the same reason that the vertical wheel does. PS: beautiful video

    I am Mexican and this guy has had more real authentic Mexican Chocolate than i have even though i live in Mexico. Mainly because i live in the north, so Oaxaca is like 12 hours away.

    Travel to Oaxaca and you will see traditional prehispanic culture and cuisine.Many Nortenos dont know much about it, we are mixed down in Oaxaca.You will find native people, afro mexicans and mestizos and its beautiful and the food is the best in all of Mexico.

    cinnamon is originally from india, if the aztec didn't use it they would use another catalyst instead i think, then later replaced it with cinnamon from india through the spanish conquestadors.

    Neither of them. It was the olmecs ("olmecas", in spanish), a culture that existed in 1500 b.C. The mayans were the ones who made the recipe of the bitter beverage that was the base of the actual chocolate

    Were the beans allowed to ferment? How long did they roast? At what temp? I use raw cocoa powder and it is not bitter nor does it have the nutritian lessoned by heat. Was the sugar refined? I use unrefined if I don't have honey, maple syrup or something sweet like dates.

    The beans are put in the sun to dry then roasted as desired just like coffee beans and of course raw cane sugar is the best to use or any other organic sweetener.

    +Nastasia Armide el chocolate no lleva leche, desde tiempos prehispánicos se le llamaba chocolate incluso antes de la llegada española y llevar leche, se le denomina chocolate a la mezcla del cacao ( el cual es un fruto ) con maíz, pinole, chile y agua. Claro que las adaptaciones españolas involucraron la leche , pero no afirmes que necesita llevar leche o azúcar para ser chocolate
