Dear Mandy, I was just looking at one of your short videos and I have to thank you for it. I have not used chop sticks for years and I had forgotten how to use them. You are in Florida now!? We are in central Florida and have a little garden that grows many of the veggies you cook with very well in our climate. I’m getting ready to harvest some Chinese cabbage to ferment!

There is a wild plant common in many parts of the US known as "lambs quarter" in English and "quelites" (I think that's a correct spelling) in Spanish. Not sure if it's exactly the same botanically as the "shepherds' purse" Mandy refers to, but I'm betting it's close enough to be an excellent substitute. Similar to spinach in many ways, but more strongly flavored. Sauteed with bacon bits and seasonings it's delicious and a very popular side dish in many homes, especially Hispanic homes. I use it a lot, especially in the spring when it's prolific here in parts of the high desert west.

Ohhh, peel the ends of the asparagus instead of snapping them - less food waste. Love!

having the vegan substitues for a dish with live lobster has me howling

Considering that I subscribe to the Leon the Lobster channel, I always have to skip the parts where they kill the lobster. I don't think I can ever eat lobster again after watching that channel. Shout out to Leon!

I added a Tablespoon of minced fresh ginger to the asparagus and it was a big hit. Gong Xi Xin Nian.

when it comes to the fried onions from the rice, take them and spread them out on a paper towel lined sheetpan, pat them dry of some exess pil, salt them and let them cool, moving themaround with a couple forks or chopsticks to release the extera steam so they crisp up when they cool, then you can serve these fried onions with/on top of the rice
