So glad you are back. I love the new set up but I miss the old kitchen with the firewood and the flames and noise that the flames made on camera. Exciting for the viewer but I am sure extremely hot for the chef. Cheers to your new kitchen and for you being back in action bro.

Wood fire seems to be hotter faster than charcoal. Although charcoal can hold the high heat longer. If the door stays closed. LOL😊

yup exactly. we feed the charcoal ovens once before service and it last all night. with the wood ovens we had to feed them every 30 minutes or so throughout service

I'm curious to know what the customer feedback has been. I'm guessing the flavor of the food is just not the same. OMG those wood fired carrots looked so freakin good coming out of that cast iron pan. Glad you're back at work and producing videos again. Best of luck.

feedback has been great. surprisingly the flavor is still pretty similar as we use a hardwood lump style charcoal

If they could make a deeper charcoal pit, it might keep the heat better since the door opens and closes a lot.

It’s more efficient as we have more cooking surface area but it’s not as fun as the old setup.

We had a fire in the chimney from build up causing a 4 month shutdown. For insurance reason we had to go with a charcoal system.

I bet he felt stupid as fuck lol I got worried for a little bit because in the beginning of this video, it seems like this new system threw everybody off, but you recovered nicely.
