Pork Tocino: Preservative-Free

I have been teaching Meat Processing for a long time now and every once in awhile I get requests for recipes without preservatives/chemicals. This is one of those recipes. A flavor is developed when the meat is "cured" with the use of curing salt. I tried to recreate the flavor of the pork tocino using basic ingredients in our kitchen. I have been happy with the results. This has become one of my favorites. I hope this will be a favorite item in your breakfast table.
Chef's Notes:
1) Use "kasim" or we call it "kas-ing" in Cebu or pork neck/shoulder because the fat is marbled. Pork Tocino without fat is dry and tough.
2) I used catsup (banana or tomato) instead of red food color. You can use atchuete seeds to color too. Soak atchuete seeds in hot water until the desired color is rendered. Drain off and use the color (do not add if the color is still hot or warm).
3) Massage the pork tocino with the marinade. Once the marinade dries up, pack in plastic bags, seal and freeze.

    Hi! Chef Rose 🌹 I got lots of your recipies and I’m so happy. Your pork tocino is so good. I haven’t tried it yet but I’m sure they’ll be yummy due to the ingredients you used and the way how you made the pork blended well with the ingredients. Now I can do this tocino and keep them frozen so I can save my time and money buy in the grocery. Chef, what is the shelf life of tocino if they’re in the freezer. Thank you for sharing. 😋❤️🙏 God bless.

    Hi! Chef Rose. I have another question. If I will use atsuete to color 1kilo of pork how do I make for the measurements. For example 1 tbsp of atsuete how much water do I use to dilute the atsuete? Or can I use asuete oil instead of asuete water and just estimate the color desired to color the tocino. Once again thank you so much for sharing. ❤️🙏

  • @ChefRoseofCaroandMarieCebu

    @ChefRoseofCaroandMarieCebu

    5 ай бұрын

    You can just estimate the amount of atsuete that you add. to achieve the color you want. Personally, I do not put any coloring when I cook it for home use.
