Beautiful but it would be nice if it said what one should do when one doesn't have access to a commercial Kitchen Aid.

You don’t need a commercial kitchen aid. Any mixer with a dough hook will do. You can also knead it by hand as long as you can get it to the right consistency. Good luck!
