PEAR KEBAB
Servings: 5
Difficulty: Medium
Cooking time: 25 minutes
Prep time: 15 minutes
5 small-medium size eggplants, peeled, leave the stems on
½ teaspoon salt
Olive oil
For the kebab;
½ kg minced meat
1 onion, grated
1 egg
4 tablespoon breadcrumbs
1 tablespoon köfte spice mix, you can buy on etsy.me/3ZdvF3V or recipe below
½ teaspoon salt
½ teaspoon black pepper
10-15 sprigs of parsley, chopped
For the sauce;
2 large tomatoes, grated
2 cloves of garlic, chopped
2 tablespoon olive oil
1 tablespoon butter
1 tablespoon vinegar
1 teaspoon sugar
1 teaspoon oregano
½ teaspoon salt
½ teaspoon black pepper
1. Spray olive oil to the eggplants and rub with the salt.
2. Cook the eggplants at 200°C (392°F) in the air fryer for 15 minutes. Flip occasionally and leave to cooldown after roasting. You can roast them in the oven as well. On grill mode for about 20 minutes at 250°C (482°F) on highest rack.
3. While the eggplants are cooking mix all the kebab ingredients except parsley in a bowl. Knead for 5-6 minutes. Add in the parsley and give a final 2 minutes kneading.
4. Lay cling film on your counter, take 1/5 (140-150 g) of the mixture and make a patty in your hands, then spread the mixture on the film to coat an eggplant. Place the eggplant on the patty and roll it with cling film like a wrap. Make sure there are no holes or cracks on the patty. If there are, patch them with wetting your hand.
5. Put or spray some olive oil to the tray and pear-shaped kebabs, place them head to feet, cook at 200°C (392°F) about 8-9 minutes. This will take longer on the oven and cook at 220°C (428°F)
6. Meantime, heat the butter and olive oil in a small saucepan on medium heat and add in the garlic.
7. After 15-20 seconds, add in the tomato puree before the garlic changes colour. Garlic can taste bitter if over fried.
8. Season with the salt, black pepper, sugar, vinegar, and oregano. Give it a stir and simmer for 10-12 minutes.
9. After the kebabs are cooked and rested for 5 minutes, pour the tomato sauce on the bottom of your plate, placepear kebabs and sprinkle some parsley and serve with yoghurt. Enjoy the heavenly bites!

80 gr salt- 3 tablespoons
80 gr ground cumin- 5,5 heaped tablespoons
40 gr sweet paprika- 2 heaped tablespoons
40 gr chili paprika -2 heaped tablespoons
20 gr garlic powder- 1 heaped tablespoon
12 gr nutmeg- 3 small nutmeg, grated
13 gr ground coriander- 1 heaped tablespoon
7 gr dry mint-2,5 teaspoons
7 gr oregano- 2 tablespoons
• Mix all the ingredients. Fill in a jar and store in a dark and dry cabinet.

I've met some Far Eastern people not finding Turkish Cuisine tasty, complaining almost every dish containing tomato, and every time salad with olive oil and lemon juice or vinegar being served with the meal. To those people who doesn't like tomato and Turkish salad and dressing, I have good news. Tomato is a good source of phenolic compounds (phenolic acids and flavonoids), carotenoids (lycopene, α, and β carotene), vitamins (ascorbic acid and vitamin A) and glycoalkaloids (tomatine). In short, anti-aging and the rest. Olive oil, I think almost everyone aware its health benefits. Lemon or Vinegar is anti diabetic. Metabolism saver.

@@katherineguidry2638 I'm from the Netherlands and Dutch recipes also use tablespoons but tablespoons are not an exact measurement like in the US. Dutch authors mean a usual dinner/soup spoon full when they say eetlepel (literally: eating spoon).

@@LMvdB02 Having lived in Europe for 18 years I understand your recipes. Btw, what do you call those little puff pastries that are sold on street corners that are cooked in something that looks like a giant waffle iron. They are usually served in a cone of paper and sprinkled with icing sugar. I try to explain it to Americans but I forgot the name.

@@katherineguidry2638in Germany there are several kinds of it. Schmalzkuchen (yeasted dough deep fryed in oil or lard and served with icing sugar) and Quarkbällchen - these are made from the cottage cheese dough and fryed and served the sane way.
I'd love to see more vegetarian recipes and more old fashioned 'home cook' recipes. Those are the ones I'm most likely to cook!

Those vege scraps you can put as they are on your gardens. Start in one part and just spread it along each day. Put next to last lot nxt time. I watch alot of Turkish mountain village cooking. They have chooks etc. Banana skins are fantastic for plants. It's potassium.

This will work perfectly with Japanese Eggplant (Nishi) also - even cutting them in half (because longer) and those Nishi do not have to be pealed, just poke the skin to let air out, when baking first... Nishi is also far much thinner, so beware of much shorter cooking time...

In the USA, most ovens do not have fans. If they do they are convection ovens with settings for bake or roast but no control to adjust the fan speed high or low. I’m sure there are some like those in Europe but I imagine they’re very expensive.

Refika did not taste her pear kebab, why? I love her dancing the lacucaracha! In the Philippines, we cook a similar dish, ground pork w onion on grilled flattened eggplant!
Bravo!!! (people who don't use sugar can replace it with one piece of carrot and later pull it out. Also, instead of foil film, use a Sushi pad to help roll the meat around the eggplant).

That sounds like katmer. There are savory versions of katmer as well, but the sweet one is a specialty of the province of Gaziantep.
