How are you muting when playing the cowboy chords? When I mute by slightly raising by fretting fingers the open strings still ring.

My guess is that you shouldn't be strumming the open strings. Only strum the high e, b and g strings.

Paul Simon mutes the chords with his fretting hand, I think you’re making this song a lot harder than it should be
